A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

A soft, steady pour produces a ½-finger thick, pale tan colored head. The beer is a pale amber / gold color that shows a brilliantly clear, full gold color when held up to the light. The aroma smells of light, not quite faint, lactic acid, funky phenolics & musk, perhaps a hint of citrus, lots of dried-grass / hay like graininess, a touch of medicinal notes.

Nicely tart tasting, it manages to have a bite without being overly sour. There is a spicy, bitter, sort of herbal bite to the finish that melds with a rounded, pale malt and grassy grain character. There is a certain lemon like character to the acidity towards the finish, this seems like a departure from a typical Lambic contribution. Light bodied and quaffable, but it has a soft creamy texture to it, despite having some prickly effervescence; light but with some palate presence. Earthy spice notes mix with hay / straw like grain notes to produce something that I imagine to be a dried field of weeds / wildflowers. Hints of medicinal notes (both herbal and Lambic in character), some lightly musky notes, and a definite mustiness come out more as the beer warms up.

A really nice blend of Saison and Lambic; this plays out as such as well, with noticeable components of each; I like the soft herbal affects, and the Lambic notes certainly bring a lot to the profile of this beer.

Bottle at Birreria Volo. Clear amber, lambic looking pour, with next to no head. Super funky, barnyardy, sour Aroma. Some nice crisp citrus notes, lots of wet hay, and wet grass and wet cardboard. I’m loving this, can’t get my nose out of the glass. A little watery mouthfeel and the carb is all but gone. The finish sees the sourness fade and turn to straight wet hay and FUNK. as it warms mint and basil make an appearance and end in more sour funkineas. Quite nice.

Bottle at beerbistro. Pale yellow with thin white head. Strong aroma of tart lemon and grass. Similar flavours with mouth puckering sourness and some grittiness.

Citrus fruits, zesty lemon and lime, some barnyard. Hazy, pale gold, small, creamy, white head. Light sour. Sour grapes, white wine, wood, getting very dry, bitter and sour, flat carbonation, medium bodied. Nice Sour, very citrussy. Keg at Mercato Neapolitano, Elephant & Castle.

Clear golden yellow beer with bubbly head leaving some lacing. Aroma has sour apple, white wine, citrus zest. Taste has sour green apples, citrus zest, yeast from the bottom of the bottle. Medium body and quite high carbonation. Lambic stands out from this mix a lot more than the saison.

Bottle shared by Jao. Hazy gold pour with a few bubbles of white foam. Aroma is very nice, juicy citrusy aromas, nice lambic character, light leather, mild funk. Taste is lightly tart, soured grain, dusty, light lactic notes. Palate is light bodied and dry, light carbonation. Tasty stuff!

Draft sample at Craft&Draft Amsterdam, The Netherlands. Time to taste event. 05.07.2016. Taste with adamnowek. Pour it cloudy orange color with no head. Aroma of orange, coriander, nice sweet tangerine, leather. Taste of floral feel, some honey, nice fruity, good balanced, perfect blend, smooth texture, orange zest with sour twist at the end. Good one!

Bottle. Virtually no head. Body is cloudy dark yellow to light amber. Aroma is lightly malty (toasted grain, caramel), lightly yeasty (cobwebs), with notes of apple butter, pear syrup, mild vinegar, sour apple, oak, decaying apricots. Flavor is lightly to moderately sweet, moderately to heavily acidic, lightly bitter. Finish is lightly sweet, moderately to heavily acidic, lightly to moderately bitter, slightly unclean. Medium body, watery texture, soft carbonation, lightly alcoholic. Somewhat unpleasant, surprisingly (for this brewer). Vinegary/acetic with not a whole lot of enticement otherwise. Bracing acidity as expected, but it’s not clean and lip-smacking like most of Ducato’s sours. A dumper for me, sadly.

75 cl, bottled. Pours cloudy orange with a small white head. Aroma: Sour zesty aroma, citric fruits. fermented smell. Taste: Mildly sweet, tart taste. Leather, dried citric fruits. Pleasant grains. Palate: Medium body, dry finish. Average carbonation. Good and balanced.
