COMMERCIAL DESCRIPTION
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

A soft, steady pour produces a ½-finger thick, pale tan colored head. The beer is a pale amber / gold color that shows a brilliantly clear, full gold color when held up to the light. The aroma smells of light, not quite faint, lactic acid, funky phenolics & musk, perhaps a hint of citrus, lots of dried-grass / hay like graininess, a touch of medicinal notes.

Nicely tart tasting, it manages to have a bite without being overly sour. There is a spicy, bitter, sort of herbal bite to the finish that melds with a rounded, pale malt and grassy grain character. There is a certain lemon like character to the acidity towards the finish, this seems like a departure from a typical Lambic contribution. Light bodied and quaffable, but it has a soft creamy texture to it, despite having some prickly effervescence; light but with some palate presence. Earthy spice notes mix with hay / straw like grain notes to produce something that I imagine to be a dried field of weeds / wildflowers. Hints of medicinal notes (both herbal and Lambic in character), some lightly musky notes, and a definite mustiness come out more as the beer warms up.

A really nice blend of Saison and Lambic; this plays out as such as well, with noticeable components of each; I like the soft herbal affects, and the Lambic notes certainly bring a lot to the profile of this beer.

(750ml bottle) Pours a cloudy golden body with a tall foamy white head. Aroma of grapefruit, weed, grass, white grapes, freshly cut pineapple, oak, and mustiness. Flavor of grapefruit, oak, minerals, brett, and lemons with a dry, mildly bitter finish. Excellent.

Color dorado tupido y escasa espuma blanca. Aromas de fruta verde, brett y madera. En boca es ligera con toques de brett y madera y un final ácido ligeramente cítrico. Muy rica.

About 3 glasses @ Lambiczoon, Milano. This beer rocks. Dorée trouble, col blanc moyen. Arôme est fruité et agréable avec ce petit bouquet d’agrumes notant le côté cuire-poussiéreux de 3F tout en ayant ce rétro-nasal un peu rustique belge de saison de la New Morning. Fruité est excellent et offre de belles notes citronnées et fleuris. Palais offre ici le subtil et savoureux mélangé de lambic et de saison. Le côté 3F est évidemment bien là mais fort bien balancé avec la bière de Ducato. Fruité agrumes, léger raisin rappelant un muscat. Effervescence moyenne avec cette combinaison et refermentation qui rapproche le produit final d’un style gueuze-saison. Acidité et le côté terreux est fantastique, discret et je note même sur la fin une fine pointe tropicale fruitée.

Une bouteille partagée par Patrick. Une bière orangée qui ne fit pas de mousse. Un nez de lambic, de fleurs blanches et de miel. Une bouche acide mais pas trop, le miel revient me hanter mais ce n’est pas sucrée. Fort agréable. Merci

(Big bottle from my friend kbudd19. Grazie!) Une robe orangée qui fabrique une mousse expansive et fébrile. Un nez de fleurs sauvages, d’aromates, de tisane aux herbes et de thé infusé avec du citron, des pêches et du miel. Intéressant comme tout! Un goût de lambic avec des fruits, du cuir de bretts et des épices. Un corps léger avec une texture huileuse et des bulles bien molles. Une belle finale parfumée, délicate, fruitée et bien sèche. Non è affatto male!

Bottle @ Voldby. Light hazy golden pour. Lots of white grapes, grain and light tartness on the nose. Taste is nicely balanced between the light tartness, the bitterness and the fruity notes. Really good!

Orange coloured and unclear. Has a white head. Funny aroma, malty, light bread and some notes of old wine. Flavor is starting sweet, then light acid, faint bitterness. Light astringent.

Bottle shared thanks to Lukaduke! Pours hazy straw yellow with big foamy brett head. Nose is musty tangy tart citrus, lemon, cheese funk. Taste is bright bubbly citrus, hay, lemon, brett funk, straw. Finish is super dry, yeasty spice, funky hayfield, orange. Very nice!

Bottle @ Voldby Tasting. Pours slightly hazy yellow with a white head. Aroma of light malt, yeast, light sourness, grapes, wood, lemonzest. Flavor is light sour, yeast, white wine, wine grapes, wood, citrus, lemonzest. Medium body, average to lively carbonation, light acidic finish. Lovely beer. 250414
