COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Snagged a tiny little sample of this at Redlight. Pours red/brown and translucent, tall white head. Smells a bit spicy, taste is similarly spicy, malty, and sweet. Medium/light body and dry.

Draft at redlight redlight. Pours a dark amber with an off-white head. Fairly earthy nose. Hints of sticks and bubblegum. Strong notes of some kind of spice I’m having trouble identifying. Lots of malt in the flavor. Very dry on the palate. Interestingly complex.

draft @ redlight redlight. Spicy malty nose, caramel, brown sugar, with a slight fruitiness. Pours a reddish amber with a thick white head. Malty, caramel, with citrus notes, with a nice bitterness, a bubble gum flavor as well almost floral. I really like this one.

Sampled on tap at Churchkey, Washington DC. Pours a transparent, copper, gold with a thin, creamy white head. Aroma is sugary, some light belgian yeast, tropical fruits, caramel. Flavor is sweet, sticky fruity, a touch of candy. Finish is medium bodied. Kinda blah.

Versa arancione scuro velato con una abbondante schiuma bianca.L’aroma è di latte e malto tostato e caramellato. Fruttato e leggermente speziato con luppolo. Speziato anche il sapore,asciutto,note fruttate. Secco e amaro nel finale. Più che discreta.

Bottle. Very hazy amber body with a big off white head. Fruity and brett like aroma. Flavour is sweet malty and fruity with a dry sour brett like kick. Ends up sweet.

Bottle at Papsø’s - Thanks. Cloudy red/amber - offwhite head. Bretty, wine notes, sparkling, wheaty, berries, soapy, wild, light roasted, red berries, nice brett & lacto - but a bit messy.

Bottle at Papsø. Muddy orange red coloured with a medium sized off white head. Light acidic aroma of berries, brett and red wine. Light acidic flavour of berries, brett, red wine, liquorice and oak. Tart and oaky finish.
