COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

One good italian product in belgian strong ale style, classic dark color, tan head, dark fruit and complex aroma, the taste is dry with light roasted and liquorice notes specially in aftertaste, soft body and medium carbonation. More difficult at the end

Pours a hazy deep brown correct with a foamy light brown hat with some lacing. Aroma of dried fruits like figs & dates with some sweet caramel, malts & some nuts. Taste is some dried sweet fruits up front with a well balanced malty body and then a nice smooth sour cherry taste on the finish that leads to a nice dry finish like a syrah & so. E warming from the 8% abv.

Bottle, Dec. 23rd Beer Advent Calendar. Murky medium brown body crowned with a bubbly tan head that compresses into a half-inch mattress. Nice malty character here, yeasty, toasty, with sweet dates, crusty bread, and dark fruits all playing on the palate. Just a hint of sourness, maybe more of a lactic acidity providing a nice finish. Enjoyed it thoroughly.

Deep brown pour with a frothy tan head. Aroma is dried fruits, roasted malts, subtle red wine nuances. Flavours replicate the nose with sour notes and a red wine barrel-esque finish. Alcohol provides a little bit of warmth.

330ml brown bottle from Craft Beer Advent Calendar. Brown pour, some haze. Nicely formed beige head, creamy edges, good stickiness. Spicy nose, caramel, some chocolate malt, nutty, hints of fruit. Taste has chocoalte and nutty malt notes, cherries and assorted fruits. Dries right out at the end, late yeasty notes. Carbonation is on the high side, body is medium. The alcohol stays well hidden. Overall a drinkable Belgian ale, but nothing I would seek out again.

Dec 23 CBAC. Big lasting brown head on dark brown head. Malty nose with fruit notes and a faint sour hint. Rich wine like malty flavour. Spice, hint of molasses. Nice winter beer.

[ASPETTO] marrone scuro con riflessi porpora controluce, velata [SCHIUMA] beige, fine e abbondante, buona persistenza [OLFATTO] profumi di miele, caramello, lieviti, frutta rossa sottospirito, sentori alcolici e spezie [GUSTO] mantiene sapori dolci , melassa e miele, a cui aggiungono note di frutta matura, prugna e fichi, potenziati da una alcolicità evidente ed una speziatura sostanziale nel finale. [TEXTURE] corpo medio, carbonazione contenuta [COMMENTO FINALE] una ale scura, di influenza belga che quasi si avvicina al concetto di dubbel, con classici profumi e saporri di frutti rossi, un alcohol evidente ed uno speziato quasi natalizio. Alcohol forse unpo’ troppo contundente anche sei gradi non sono esagerati. per il resto direi buona, anche se non stravolgente.
