This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Si presenta torbida, con poca schiuma.Al naso si presenta con note di mosto e frutta matura. Al palato si rinnovano le suddette impressioni. Non č troppo carbonata. Un pň slegata forse. Non mi ha fatto proprio impazzire; forse bottiglia sfortunata. Comunque sempre grandissima fiducia a questo gran birrificio.

Bottiglia 33 cl. Colore ambrato carico, velato, con schiuma beige abbastanza persistente. Naso intenso, abbastanza persistente e complesso (fruttato, tostato, miele). in bocca entra dolce, morbida, abbastanza calda e con un bel corpo.......piaciuta!!

Interesting beer. Poured perhaps a touch cold, with a small to medium sized, cream-colored head that soon settles to some swirls and a ring with a tiny bit of lace. Color is a cloudy brown amber opaque in the wider parts of the glass. Aroma is a muted combo of malt, fruit, apricots, plums, yeast, wine. Flavor is a blend of those qualities with interesting interplay between sweet and carbonic tang being slightly more dominant than bitter. Very rich. Body is big, but the sweet, tang and bitter create high points that along with its richness make it a little overpowering. Carbonation is good taken alone. Finish is medium in length. No alcohol warmth. One and done.

330ml bottle. Malty and spicy aromas. Pours bright dark gold, with nice white head, persistent. Medium body and carbonation. Taste is some sweet, malty, with spices and herbal flavours. Good long finish. Really enjoyable, and a tasty twist for the style. Quite enjoyable.

Little.non lasting head brown. Brown sugar. Prune, liquorice .medium body and some length. Sweet with a light prune and brown sugar. Pleasant and lightly drunk!?!

Bottle from Da Aldo. Poured murky, with a brown-amber color and a tan head. Spices, raisins, licorice, nuts and lcohol in the aroma. Medium bodied and carbonated with a roasty, soury finish. Decent.

Courtesy of Balázs, thanks! Sötétebb borostyán vörös színe van, belül ködös és zavaros. A habja nagyon vékony és vizesen buborékos. Illata fűszeres, égetett cukros, érett kék sajtos és kissé fanyar. Az ízében felfedezhetők aszalt gyümölcsök, élesztő, gorgonzola, sok fűszer és egy vörösboros fanyarság. Testes és kevés buborékkal van ellátva. Utóíze kissé fanyar, igen gyümölcsös és száraz. Nagyon érdekes sör, ami kis rokonságot mutat a szárazabb, gyümölcsösebb vörösborokkal.

Deep amber reddish beer with a nice creamy-lacing tan head. Caramel, fruits like fig, some overriped cheese in the aroma. Medium body, fruity character, taste of fig, raisins, light sourish-vinous taste, light roasted-toasted flavor.

Shared with James. Murky brown purple pour with ample near white. Sweet tart and woody bourbon notes. Fruity tart funk on the tail. Fairly unusual. But good carbonation. One of the better Italian Brews I’ve had.

Draft. Amber-brown beer with a cream colored head. Tart and dark fruit aroma. Dark fruit and tart flavor with light yeast. Medium bodied. Tart and dark fruits linger with light spice and light yeast.
