COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Bottle. Poured hazy dark brown with an average frothy white head that was mostly lasting with good lacing. Moderate complex dark fruit aroma. Medium to full body with a smooth texture and flat carbonation. Medium to heavy dark fruit tart flavor with a medium tart finish of moderate duration. This is a smooth complex beer

@ ACBF ’11. Aroma is swampy malt. Flavour is fruity swampy malt. Hmm, something not matching my palate here.

Basically a dubbel in body. Murky red-brown in color. Hints of decadent plum, candi sugar. Overall, in my opinion, a very pleasant belgian style dark.

ACBF. Hazy red amber beer. Small tan head. Light palate. Sweetish light malt. A liitle dried fruit and some bubblegum underneath. Overall a dissapointingly average beer.

Bottle @ ACBF 2011. A clear red/brown colored beer, with a beige head. The aroma of malts, fruits and vanilla. The taste of sparkling fruit, citus, winery. The aftertaste sweet fruity with some bitter.

It’s unclear, red-brown with sediment and a creamy head. The aroma has notes of malt, dark fruits, caramel and sweet coffee. The mouth-feel is slightly fizzy. The flavour is sweet with notes of malt, caramel, filled chocolates, dark fruits, light cocoa, and the finish is dry with a light bitterness.

Bottle. Pours a hazy amber with a slight brown hue and a light brown head that lasts and laces nicely. Aroma has a slight wine note that combines surprisingly well with a strong sweet malt backbone with sweet grain and biscuit. Flavor began surprisingly wine forward with dry near tart red fruits that mellowed to allow caramel, biscuit and sweet grains come out for an interesting finish. Different but enjoyable.

Bottle @ ACBF 2011. Pours brown with a red shine, sweet estery nose, banana... Belgian trappist yeast strain?? Taste is not sweet but ends rather dry.
