COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Bottle - 330ml. Nice dark copper body with a decent beige foamy head. Its sharp hoppy aroma carries malty, fruity, and yeasty hints. Taste is well balanced and hides the alcohol pretty well. Fruity and yeasty notes are present. Ends with a fair bitter/sour finish. Enjoyable.

Brown color with a large white head. Spicy malty aroma with some, caramel and brown sugar. Malty, caramel, with citrus notes in the flavor with a nice bitterness finish.

Bottled sample via boutip. Ruby brown in colour with medium carbonation. Aromas are of red wine, caramel, red apple, and spicy Belgian yeast. Acidic red fruit flavors dominate the palate, and are backed by minerals, toasted malt, pale malt, and magic marker. Medium bodied, but the tartness and slightly fizzy carbonation make it feel a bit lighter on the palate. A hard beer to pin down, yet it’s quite drinkable.

(Bottle, 0.33 l, at Pikkulintu) Poured dark brown and cloudy. Head was medium sized and white. Aroma contained intially malts and molasses and after the beer had warmed up a bit the aroma was dominated by paint thinner. Palate was medium bodied with medium carbonation. Flavours were malts, paint thinner, raisin, mild roastedness, boiled vegetables and mild bitterness. Aftertaste was sweet and bitter. If you drink this drink it very cold and really quickly.

(11.2oz bottle) Pours a hazy amber body with a medium foamy off-white head. Aroma of candi sugar, raisins, earth, mustiness, Belgian yeast, and wet leather. Flavor of apricots, peaches, raisins, Belgian yeast, brett, and florals.

11.2 bottle from Oak Tree. Pours hazy ruddy with a 3 finger off-white/beige head. Aromas of dark fruit resembling date/raisin and some warm caramel. Near medium body with rather spritely/fizzy carbonation. It’s a little herby, a little oaky, and lightly bitter. It actually suddenly gets pretty bitter. A different beer - as so many of these Italian crafts are. Takes getting aclimated to. Definitely worth the experience. Wonder if there are chestnuts? Suddenly it comes to me that it’s a little sour. Even better.

(11.2oz bottle thanks to bu11zeye) ruddy brown with a long lasting tan bubbled head. Nose of raisin, alcohol and yeast. Taste of sweet raisin, alcohol, yeast, sweet malt, tart orange and somewhat chalky. Soft creamy carbonation with a fruity linger.

Amber pour from bottle shared by bu11zeye. Aroma is fruity, featuring sour apples. Taste is slightly sour fruit, pumpkin pie spices and carbonated fizz. Light, hoppy finish. Not bad at all for an Italian beer.

Beautiful 330mL bottle in a mini-Duvel tulip glass. Pours a thick dark amber, cloudy and even cloudier when the bottom is poured. Nothing too special about this beer, a nice mix of Belgian yeast esthers, very very fruity due to that (maybe too high of a temp). Fruity esthers pretty much take over and there is not too much else to it. Medium body with an empty ending, medium-strong carbonation. I could drink it again but nothing grabs me.
