COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Bottle. Pours a hazy bruin body with an off white head. Fruity and sweet with candied toned esters, banana’s sugar and malt tones. Light candied sugar tones. Mild boozy tones with etoh latent fruit. Average ale.

from Mondial de la Bière 2010, Strasbourg - cloudy ruby-brown colour with a little persistent beige foam; aroma of apple, biscuit and candi sugar; a high carbonation and with a good malt body; fizzy finish with notes of apples, pineapples and malt

Magnifique bouteille de 330 ml obtenue via Importations Privées Bièropholie. Arôme: Odeur de caramel fruité avec une pointe d’épices. Apparence: La couleur est brune opaque avec une faible densité de bulle. Présence d’un moyen col mousseux et d’une large dentelle sur le verre. Saveur: Goût de petits fruits et de caramel avec une pointe d’épices. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Moyenne effervescence en bouche. Présence de petits fruits en arrière goût. (Rating #3346)

Bottle - 330ml. Nice dark copper body with a decent beige foamy head. Its sharp hoppy aroma carries malty, fruity, and yeasty hints. Taste is well balanced and hides the alcohol pretty well. Fruity and yeasty notes are present. Ends with a fair bitter/sour finish. Enjoyable.

Brown color with a large white head. Spicy malty aroma with some, caramel and brown sugar. Malty, caramel, with citrus notes in the flavor with a nice bitterness finish.

Bottled sample via boutip. Ruby brown in colour with medium carbonation. Aromas are of red wine, caramel, red apple, and spicy Belgian yeast. Acidic red fruit flavors dominate the palate, and are backed by minerals, toasted malt, pale malt, and magic marker. Medium bodied, but the tartness and slightly fizzy carbonation make it feel a bit lighter on the palate. A hard beer to pin down, yet it’s quite drinkable.

(Bottle, 0.33 l, at Pikkulintu) Poured dark brown and cloudy. Head was medium sized and white. Aroma contained intially malts and molasses and after the beer had warmed up a bit the aroma was dominated by paint thinner. Palate was medium bodied with medium carbonation. Flavours were malts, paint thinner, raisin, mild roastedness, boiled vegetables and mild bitterness. Aftertaste was sweet and bitter. If you drink this drink it very cold and really quickly.

(11.2oz bottle) Pours a hazy amber body with a medium foamy off-white head. Aroma of candi sugar, raisins, earth, mustiness, Belgian yeast, and wet leather. Flavor of apricots, peaches, raisins, Belgian yeast, brett, and florals.

11.2 bottle from Oak Tree. Pours hazy ruddy with a 3 finger off-white/beige head. Aromas of dark fruit resembling date/raisin and some warm caramel. Near medium body with rather spritely/fizzy carbonation. It’s a little herby, a little oaky, and lightly bitter. It actually suddenly gets pretty bitter. A different beer - as so many of these Italian crafts are. Takes getting aclimated to. Definitely worth the experience. Wonder if there are chestnuts? Suddenly it comes to me that it’s a little sour. Even better.
