COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

7/17/10 notes: bottle. Appearance is murky dark brown with ruby. Aroma is a blast of aged fruit, nuts, toast and chocolate. Flavor shows more dried red fruit and dark candy sugar, with a finish that incorporates mild tartness well. A great drinker from start to finish, interesting at every step.

Thanks to bu11zeye for sharing this bottle. The beer pours a brownish-amber color with a white head. The aroma is toffee and caramel malts. The flavor is similar with a little bit of citrus to go with the toffee. There is also some brown sugar in the flavor. Medium mouthfeel and medium carbonation.

Bottle at Bistro l’autre oeil. Red brown with a medium beige head with good retention. Aroma is fruity with malt, balsamic, sugar and caramel. Flavor is fruity with red fruits, caramel, malt, minimal herbal notes, sugar and yeast. Medium body.

Pours a murky amber color with a medium beige head. Aroma of caramel and toasted malt. Flavor of caramel and toasted malt. The body is medium and the carbonation is soft. It’s definitely not a bad beer, but this one just didn’t do it for me.

Bevuta in bottiglia sotto il marchio "birrificio artigianale italiano - strong ale" con un bassotto disegnato, sono pressochè certo che sia questa. Colore ramato, parecchia schiuma persistente, un gusto che mi ricorda tantissimo la brooklyn lager, ma più corposa e leggermente più alcoolica; un forte amaro sul finale (dry hopping?). Mi è piaciuta moltissimo

Bottle: Poured a cloudy light amber color ale with a large foamy head with good retention and good lacing. Aroma of lightly sweet caramel malt with huge caramel malt presence with just the right amount of residual sugar. Taste is also a strange mix between some caramel malt with a right balance of residual sugar with a light hoppy finish and some dry figs and plums notes. Body is quite full with good carbonation and no apparent alcohol. Hard to categorize but well worth drinking.

33 cl bottle (attractive!) from Bieropholie, served at cellar temperature in a tulip glass.

App.: Deep mahogany with a frail light tan head. Aroma: Tart fruitiness, nutty brown sugar and rum dark-like notes, organic acids that hint of infection, figs, apricots, some tart berries, alcohol, not what I expected for the style. Palate: Medium body, fairly sparse, floppy effervescence, a little astringent. Flav.: Similar to the nose with lots of bright fruitiness, hazelnuts, some brown sugar, alcohol, berries, apricots, some pear drop/solvent, less deep than the nose in terms of malts, no hop notes to speak of; off-dry with tartness and some bitterness than is masked by the acidity, with a decent malty, kinda fruity finish.

Like the name implies, this beast is made up of many parts that don’t really go together well.
