COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

UPDATED: MAY 31, 2010 My Bottom Line:
Caramel-glazed plums and dried apricots are offset by mild citrusy tartness in this barely carbonated dessert brew.

Further Personal Perceptions:
-A slim film of foam covers the murky amber-laced dark russet.
-The very low carbonation makes the mouthfeel heavier than it should be. After reading other reviews, it seems to me their bottle conditioning might not be perfectly controlled.
-The finish is very quiet if you consider the loquacious dextrins.
-Orange peel subtleties appear underneath.
-The fruit salad seems to involve cherry allusions as well.
-here is little to no hop presence in here.

Bottle at Alvinne CBF 2011. Dark red/brown colored beer, opaque, beige head. Smell malts, fruits and distant vanilla. Taste is pretty good, nice carbonation and medium to full body.

A Mes rate. Gravicask at Pigs Ear. An excellent clean mid amber colour with a thin white head and excellent condition. Well balanced white English bread like malt and some lovely faint tropical fruit notes. Delicate sweetness. Really good hint of caramel. Slight oxidised notes. Clean finish. Really good. Draft. Amber-brown beer with a cream colored head. Tart and dark fruit aroma. Dark fruit and tart flavor with light yeast. Medium bodied. Tart and dark fruits linger with light spice and light yeast.

Bottle. Pours a hazy amber with a slight brown hue and a light brown head that lasts and laces nicely. Aroma has a slight wine note that combines surprisingly well with a strong sweet malt backbone with sweet grain and biscuit. Flavor began surprisingly wine forward with dry near tart red fruits that mellowed to allow caramel, biscuit and sweet grains come out for an interesting finish. Different but enjoyable.

Bottle, Dec. 23rd Beer Advent Calendar. Murky medium brown body crowned with a bubbly tan head that compresses into a half-inch mattress. Nice malty character here, yeasty, toasty, with sweet dates, crusty bread, and dark fruits all playing on the palate. Just a hint of sourness, maybe more of a lactic acidity providing a nice finish. Enjoyed it thoroughly.

Off? Brown and unclear, sediments. Has an off-white head, mostly lasting. Acidic flavor, light sweet, light bitter. Dry, watery texture. Sharp. Lively carbonation.

Appearance: fine haze on dark amber , lighter fine creamy top. 3-
Nose: Refreshing hop aroma, bit citric , amber sweet malts , hint of alcohol.
Flavor/Palate : Medium bodied. Clean , bit plain with citric hoppy character. Bit green on top with light malts. Light yet noticeable alcohol content.
