COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

Bottle. Very hazy amber body with a big off white head. Fruity and brett like aroma. Flavour is sweet malty and fruity with a dry sour brett like kick. Ends up sweet.

Appearance: fine haze on dark amber , lighter fine creamy top. 3-
Nose: Refreshing hop aroma, bit citric , amber sweet malts , hint of alcohol.
Flavor/Palate : Medium bodied. Clean , bit plain with citric hoppy character. Bit green on top with light malts. Light yet noticeable alcohol content.

(Bottle, Monk’s Café, Stockholm) Hazy, amber colour with brief, frothy, beige head. Malty, fruity nose with notes of orange and raspberries. Malty taste with dried fruit, orange and caramel. Slightly grassy, citrussy finish. A bit sweet, but nice and well balanced. Less exciting than most of the other Ducato beers though.

Magnifique bouteille de 330 ml obtenue via Importations Privées Bièropholie. Arôme: Odeur de caramel fruité avec une pointe d’épices. Apparence: La couleur est brune opaque avec une faible densité de bulle. Présence d’un moyen col mousseux et d’une large dentelle sur le verre. Saveur: Goût de petits fruits et de caramel avec une pointe d’épices. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Thanks to bu11zeye for sharing this bottle. The beer pours a brownish-amber color with a white head. The aroma is toffee and caramel malts. The flavor is similar with a little bit of citrus to go with the toffee. There is also some brown sugar in the flavor. Medium mouthfeel and medium carbonation.

(11.2oz bottle thanks to bu11zeye) ruddy brown with a long lasting tan bubbled head. Nose of raisin, alcohol and yeast. Taste of sweet raisin, alcohol, yeast, sweet malt, tart orange and somewhat chalky. Soft creamy carbonation with a fruity linger.

Bottle. Pours a hazy bruin body with an off white head. Fruity and sweet with candied toned esters, banana’s sugar and malt tones. Light candied sugar tones. Mild boozy tones with etoh latent fruit. Average ale.

0.33 l bottle at Stockholm Beer Festival 2008. Hazy amber color. Sweet aroma with honey, toffee, orange marmelade and solvent. Sweet worty, toffeish and honeyish flavor with orange marmelade, chocolate and nuts. Too sweet with some disturbing solvent.
