COMMERCIAL DESCRIPTION
Birra di alta fermentazione rifermentata in bottiglia, di color tonaca di frate. Al naso si presenta con aromi caramellati, frutta sotto spirito (marasca, prugna) e leggere tostature. In bocca esprime calore e complessità ma rivela un finale inaspettatamente secco che rende la bevuta più facile. Lei è il nostro sogno irraggiungibile, la compagna che abbiamo sempre cercato e che forse non troveremo mai. Una birra dedicata a tutti quelli che hanno ancora voglia di sognare e che non smetteranno mai di cercare la felicità che meritano. La storia di questa birra è stata abbastanza travagliata, all’inizio era molto diversa da come si presenta ora e, nonostante credo di essere sulla strada giusta, la ricerca suppongo non sarà mai del tutto terminata. Se dovessimo darle una definizione stilistica potremmo dire che assomiglia ad una Belgian Dark Strong Ale oppure vagamente anche ad una Dubbel. In effetti le ispirazioni per questa birra mi sono venute dalle bevute (dentro e fuori dal Belgio) di molte birre, alcune delle quali risalgono a molto tempo fa quando ero ancora un ragazzino, e non mento se dico che le prime birre a suscitare in me l’interesse per questa meravigliosa bevanda furono proprio simili alla Chimera di oggi. È un po’ come inseguire un’illusione di cui ci si è innamorati tanto tempo fa vagheggiando nel passato, trovando al risveglio la consapevolezza che è proprio nella ricerca dei sogni che si concretizza l’immortalità dello spirito. 18°

(Bottle, 0.33 l, at Pikkulintu) Poured dark brown and cloudy. Head was medium sized and white. Aroma contained intially malts and molasses and after the beer had warmed up a bit the aroma was dominated by paint thinner. Palate was medium bodied with medium carbonation. Flavours were malts, paint thinner, raisin, mild roastedness, boiled vegetables and mild bitterness. Aftertaste was sweet and bitter. If you drink this drink it very cold and really quickly.

Pours a murky amber color with a medium beige head. Aroma of caramel and toasted malt. Flavor of caramel and toasted malt. The body is medium and the carbonation is soft. It’s definitely not a bad beer, but this one just didn’t do it for me.

Bottled at Monk’s Café, Stockholm. Pours out in a hazy reddish amber colour with a small white foam. Fruity and very hoppy aroma of grass, blood-grape, pepper and paint with sweet undertones of blood-oranges. Medium-bodied with hoppy notes of blood-grape and grass with touches cookies and yellow fruits. long bitter finish of wet grass, grapefruit and orange-peels. Tasty!

Draft at Redlight Redlight. Pours a clear reddish-amber color with a small, foamy, tan head that settles to a thin, patchy film. Micro-spot lacing dots the glass. Aromas are boozy for a relatively small beer, showing grainy alcohol notes of a base of pale cereal malts, toast, oregano, and an odd, briny sort of funk. Hints of pickles come to mind. Flavors again are grainy, in a alcoholic sort of way, with a strange, mildly tart funk, dusty yeast, and notes of sage and oregano. The palate is thin, bordering on watery, sporting moderate carbonation and a drying, boozy finish. Eh, I’m not impressed in the least bit with this one.

Shared with James. Murky brown purple pour with ample near white. Sweet tart and woody bourbon notes. Fruity tart funk on the tail. Fairly unusual. But good carbonation. One of the better Italian Brews I’ve had.

Bottle @ Mondial 2009. Aroma is sweet candied malt, some wheat notes, deep copper, small toffee head. Taste is a big roasted malt, caramel and nutty. Medium bodied, lucious mouthfeel. Terrific!

Sampled on tap at Churchkey, Washington DC. Pours a transparent, copper, gold with a thin, creamy white head. Aroma is sugary, some light belgian yeast, tropical fruits, caramel. Flavor is sweet, sticky fruity, a touch of candy. Finish is medium bodied. Kinda blah.

Bottle @ ACBF 2011. A clear red/brown colored beer, with a beige head. The aroma of malts, fruits and vanilla. The taste of sparkling fruit, citus, winery. The aftertaste sweet fruity with some bitter.
