COMMERCIAL DESCRIPTION
This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier.
“To all those who still hold dreams and will never cease to search for the happiness they deserve”.

Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink.

330ml bottle. Slightly cloudy reddish dark amber colour with average to huge, firm, endlessly lasting, moderately lacing, foamy, off-white head. Toasty, caramel malty aroma with fruity notes of berries, yeasty overtones. Taste is yeasty, fruity, toasty caramel malty, has also a tart note; some warming alcohol in the finish.

Bottle @ Mondial 2009. Aroma is sweet candied malt, some wheat notes, deep copper, small toffee head. Taste is a big roasted malt, caramel and nutty. Medium bodied, lucious mouthfeel. Terrific!

330ml bottle, hazy dark amber hue, with a thick beige head, yeasty, toasted, caramel, biscuity, bready malt, cookie dough nose with some fruity dark dried raisin, fig and toffee accents, with a soft winey, oaky, tannic note, with some spicy, cakey, wheat muffin aromas follow through on a medium-bodied palate with a warmth yeasty, faint winey, fruity, sweet caramelized, toasted, biscuity malt character with some dried raisin, fig, date, cookie dough, toffee backbones, with some faint oaky, tannic undertones and some bran cake, subtle nutmeg spicy accents, leading towards a warming, malty, caramel, toffee, faint lingering winey, vinous, fruity finish.

Bottle - 330ml. Nice dark copper body with a decent beige foamy head. Its sharp hoppy aroma carries malty, fruity, and yeasty hints. Taste is well balanced and hides the alcohol pretty well. Fruity and yeasty notes are present. Ends with a fair bitter/sour finish. Enjoyable.

Bottle @ ACBF 2011. A clear red/brown colored beer, with a beige head. The aroma of malts, fruits and vanilla. The taste of sparkling fruit, citus, winery. The aftertaste sweet fruity with some bitter.

33 cl bottle (attractive!) from Bieropholie, served at cellar temperature in a tulip glass.

App.: Deep mahogany with a frail light tan head. Aroma: Tart fruitiness, nutty brown sugar and rum dark-like notes, organic acids that hint of infection, figs, apricots, some tart berries, alcohol, not what I expected for the style. Palate: Medium body, fairly sparse, floppy effervescence, a little astringent. Flav.: Similar to the nose with lots of bright fruitiness, hazelnuts, some brown sugar, alcohol, berries, apricots, some pear drop/solvent, less deep than the nose in terms of malts, no hop notes to speak of; off-dry with tartness and some bitterness than is masked by the acidity, with a decent malty, kinda fruity finish.

Like the name implies, this beast is made up of many parts that don’t really go together well.
