COMMERCIAL DESCRIPTION
A Barley Wine aged 18 months in French oak wine barrels previously used for Amarone della Valpolicella wine.

Barley wine di grande carattere, maturato per 18 mesi in barriques di rovere francese usate per invecchiare vino Amarone della Valpolicella. Di color ramato intenso con riflessi rossi, al naso è straordinariamente ricco e complesso, sprigiona profumi di frutti rossi (marasca e ribes) e vaniglia, con sentori di sottobosco e reminescenze vinose. In bocca è caldo, di gran corpo e privo di gasatura. Una birra al di là di preconcetti e luoghi comuni, dedicata all’uomo di domani.

L’Ultima Luna è la birra che ho ideato per celebrare la nascita del mio primo figlio, Matteo. Ricordo che durante i mesi dell’attesa ho pensato a lungo alla birra che gli avrei dedicato, volevo che fosse profonda, complessa, evocativa e che si potesse destinare ad un lungo invecchiamento. Decisi di utilizzare botti usate di Amarone (uno dei miei primi amori in campo enologico), ma riempite solo per 2/3 del loro volume, in modo tale da favorire l’ossidazione della birra con l’aria (un omaggio al mio passato in Andalusia, ai vini ossidati di una terra in cui ho lasciato un pezzo di cuore). La birra (se così la si può ancora chiamare) avrebbe dovuto originariamente invecchiare 9 mesi, ma con l’esperienza ho capito che l’invecchiamento minimo per questa birra è di 18 mesi. In etichetta ci sono delle citazioni di Dalì e Saint-Exupéry, l’immagine del bambino che solleva surrealisticamente il mare è un chiaro riferimento a Matteo. Quello che mi affascina in questa birra è l’eccezionale complessità degli aromi terziari (cuoio, crosta del formaggio, madeira, legno, mandorla tostata) dati dall’ossidazione, una cosa che mi piace fare è lasciare le bottiglie aperte e berle dopo circa 3 mesi per innalzare il livello del godimento.

Bottle 33 cl. Courtesy of madmitch76. Pours a cloudy opaque dark brown with no head - completely flat. Amazing aroma of Brett, wood and indeed wine. Solid body, caramel, wood, tart cherries and again quite some Brett and funk. A little warming alcohol in the finish. Both delicate and extremely delicious. 230311

Bottle @ ACBF 2011. A clear red/brown colored beer with no head. The aroma of vanilla with wood, a lot of fruits. Hints of alcohol. The taste is fruity, brandy like, apricot with notes of alcohol. The aftertaste is mostly sweet with burny notes.

Clear medium to dark red amber color with virtually none head. Aroma is moderate to heavy malty, caramel, tobacco, wood, raisin - cherry - fruity - berry. Flavor is heavy sweet and bitter with a long duration, dried berry, tobacco, wood. Body is medium, texture is oily, carbonation is flat, finish feel is light to moderate alcoholic. [20110304]

[3/4/11] Bottle at ACBF 2011. Clear deep amber-brown. Aroma of malt, caramel, cookies and soy sauce. Sweet caramelly flavor with lots of malt, fruits and some soy sauce. Finishes slightly drier. Medium-full-bodied.

Re-rate Reserva 2010, tasted at the 4th BBF @ de Molen. Hazy brown pour, aroma of leather, bourbon, dry fruits. Smooth and round. Flavor is more bourbon, fruits, somewhat sweet, thick body, well balanced, low carbonation. 9/3/9/4/18

Clear brown ale, dark brown sediment, no head. Aroma: port, red wine, spices, orange peel, herbs, ... MF: flat, medium to full body, little syrupy texture. Taste: little sweet, fruity, soft, vinous, vie d’eau, alcohol. Aftertaste: little sweet, alcohol, some sour notes, orange peel.

Bottle at ACBF 2011. Hazy red brown coloured with a small off-white head. Sweet aroma of caramel, dried fruits and rum with notes of oak. Sweet flavour of caramel, dried fruits and berries with notes of oak and rum. Sweet finish.

Bouteille @ ACBF 2011. Couleur cuivre, mousse est fine beige. Arôme garde une approche bien italienne, je ne pouvais pas m’empêcher de noter une fine présence de noisette. Cela était agréablement accompagné par le malt ainsi que le chêne et une très légère touche de vin. En bouche, je garde ce côté noisette avec un malt un peu biscuité allant sur du caramel. Le tout reste léger en bouche avec un léger fini grillé. L’aspect magnifique de cette bière est la dimension que le fût de chêne de vin donne à la bière. Une bière au caractère évolutif et qui s’améliorera avec l’age.

33 cL bottle at ACBF2011. Pours clear and golden orange with no head. Aroma is dense malty, mead like and solid alcohol. Dry malty, slight wooden and wineous. Lingering dense malty and roasted.
