Why, this is just amazing beer!!! Kind of blows me away. Way different than anticipated. Commercial deScription is very accurate. Poured with a huge, fluffy, foamy, frothy, off white head that lasts and some lace. Color is like tea with a spot of milk in it - very hazy to almost cloudy amber. Aroma is malt, spice, herbs, yeast. Flavor is much larger - I can taste each of the listed components plus some sweetness that balances the carbonic acid perfectly. I can drink the hell outta this beer. Body is excellent: mouth filling in the density and yet the carbonation is right where I like it. Finish is dry and bitter enough to not be cloying and yet the sweetness just makes me smile. Whoa is this good!

UPDATED: JAN 26, 2015 Tasted from cool bottle (from Binny’s in Chicago) into nucleated tulip glass. Name means "new morning" in Italian, which is a very appropriate metaphor for this lightly spiced saison. Poured a hazy, light golden color, massive white foam, long-lasting with lots of lace. Amazing aromas: floral, herbal, earthy, mildly spicy hops with some nice Belgian yeast esters. Flavors of mild malts, soft wheat, and subtle blend of vegetal seasonings. Spritzy, crisp and refreshing palate, complex dry finish. Superbly interesting saison. Delicate and beautifully balanced. I can’t wait to find more.

Poured a nice airy, opaque orange, with a solid undying head of foam. The aroma is delicious -- full of garden-fresh vegetables. The drink is even more enticing and flavorful! The flourish of earth, pepper, and just a kiss of ginger -- a flavor I usually don’t favor in a beer -- but in this it comes across quite nicely. A+ (#3737, 11/14/2009)

Pours a great amber golden with a fine, frothy, staying, white head. Aroma is peppery at first, then some sweet herbal notes. Both ginger and chamomile is clearly discernible. Very nice, frothy mouthfeel. Flavour is sweet at first, good maltiness. Then the sweetish chamomile takes over lending a more spicy feel to the overall experience. Both the yeast and the green pepper takes over at the end, finishing lightly sharp. Very fresh, very different and very nice. 7/4/9/4/16 = 4.0

Second rating @ YNWA, Kolding.
Wow... it blew me away this time. Hazy yellow with an impressive creamy white head. Sweet aroma, light honey, camomille and pepper. Low carbonation and super oily mouthfeel. Flavours include flowers, malty sweetness, dry hoppy and spicy finish. Pepper, vanilla, tulips and honey. Long lingering aftertaste! Great!

A Mes rate. Bottle thanks to Mario.
A beautiful looking hazy yellow orange with an impressive bright white head. Aroma is equally lovely. Excellent yeast, a tiny hint of candy sugar and some glorious summery hoppage. Hints of lemon and orange and just a lick of the chamomile. Excellent. The flavour follows on in equally fantastic form. The ginger is ever so delicate but adds plenty of interest. Likewise the coriander. The hops are superb, giving a relaxed but obvious bitterness and a really good, clean as a whistle finish. Faint hint of something brett like in the aftertaste. Fantastic beer all round.

Amazing beer, one of my first true Italian beer experience and I was not let down. They are doing some amazing stuff with their beers, coming up with very innovative ways to turn the "classical" beer world’s notion of what a style such as a saison should taste like. The palate was like nothing else I have tasted, with the flavors coming together to make an overall cinnamon taste, which is really the ginger, coriander, green pepper and chamomile mixing beautifully.

Une belle couleur jaune trouble. Un gazeification trčs importante. Un nez trčs frais presque de menthe. En bouche des arômes de froment bien présents.

Bottle. What a great looking beer. Green pepper? Are you fuckin kidding me? Anyway, the aroma is pretty maltywith banana and the palate is really dry. Flavor is cereal without being too sweet, peppery spicy, full bodied with some leather. Really impressive.

Bottle: Pours a hazy golden with a thick, dense, pillowy white head. The aroma is complex and spicy. Yeasty upfront, with notes of coriander, soft herbal notes, honey and very light bubblegum in the back. The mouthfeel is fluffy and creamy. Softly sweet malt base- very light dough notes, followed by evident coriander. Then comes a swarm of complex spice layers. I definitely pickup on a distinct and unique bell pepper (peppercorn) notes. There’s also some spicy herbs, a nice ginger bite, however, subtle, and just a smooth peppery bitterness left on the palate. The early malt characteristics in the fore is perfectly balanced by the layers of complex and unique spiciness. Complex and dry throughout. A great Saison!
