This bottom fermented beer is golden yellow in color with floral and herbaceous hop aromas (due to the use of Tettnang Tettnanger blooming hop variety personally selected during harvest time). The finish is sharp with a hoppy bitterness and hints of acacia honey.
Elegant, balanced and gratifying: there is always room for her!

La VIÆMILIA being my first creation, is considered by many our signature brew. Although it may appear a simple lager, its brewing is the longest and most delicate. It is cellared for at least 6 weeks, out of which the first week is for primary fermentation and the remaining 4 to 5 for lagering at 3◦C to allow the young beer to refine. During this last phase hop flowers are added. Every year, at the beginning of September, we travel to personally select hops from the farmers of Tettnang (a small village in the south of Germany renowned for cultivating high quality aroma hops).VIÆMILIA unravels such extraordinary floral and herbaceous hop aromas due to the dry hopping process.

Manuel was inspired to call it VIÆMILIA since this beer is an anthem to our land, oppressed by thick fogs during the winter and withered by a merciless sun during the summer afternoons. The verses of a poet from Bologna helped me to put into words the mental image of a lazy day in June.

Slightly hazy pale yellow color, small white head, lace. Grainy, a bit fruity and yeasty aroma, kind of malty and spicey too. Light bodied. Grainy malty with nice German style hoppyness. Lingering bitterness and some sweet maltyness in the finish. You don’t expect to drink pils from the bottle like this.

Bottle sample at a tasting at Ariel’s place. Thanks Yoav. Clear-to-hazy blond with a white head. Sweet and a little malty aroma, malt and grain and a little vegetal taste. Light-to-medium body, malty, grainy and warm finish.

Bottle. Pours a hazy soft yellow-gold with a very high, mixed-grained, bone-white, lacy head. Nose is lemon, dust, yeast, wheat bread, and a touch of smoke. Sweet on the front of the tongue, with lemon and honey notes, then drying out to wheat bread, smoke, dust, toasted grain, almonds, and a faint herbal note. Finish is citric and crisp/clean. A little thin, perhaps, and the hops are a bit too subtle. It’s pleasant.

Lovely light milky grains in the aroma - extremely grainy. Raw, light trainy taste - pure barley. Pale, but very hazy - looks good! Persistent light head. So grainy everywhere - finish included. Very refreshing - some heather? For a malt nut like me, this is just what I want in a beer. Would session.

1/3 pint at BeeRoma 2015 (short rating, overall impressions only). Muted nose with just a reminiscence of cereals and freshly cut grass. Delicate but flavorful, solid and persistent floral and earthy bitterness with a mild peppery kick in the finish. Refreshing and way too easy to drink.
