This bottom fermented beer is golden yellow in color with floral and herbaceous hop aromas (due to the use of Tettnang Tettnanger blooming hop variety personally selected during harvest time). The finish is sharp with a hoppy bitterness and hints of acacia honey.
Elegant, balanced and gratifying: there is always room for her!

La VIÆMILIA being my first creation, is considered by many our signature brew. Although it may appear a simple lager, its brewing is the longest and most delicate. It is cellared for at least 6 weeks, out of which the first week is for primary fermentation and the remaining 4 to 5 for lagering at 3◦C to allow the young beer to refine. During this last phase hop flowers are added. Every year, at the beginning of September, we travel to personally select hops from the farmers of Tettnang (a small village in the south of Germany renowned for cultivating high quality aroma hops).VIÆMILIA unravels such extraordinary floral and herbaceous hop aromas due to the dry hopping process.

Manuel was inspired to call it VIÆMILIA since this beer is an anthem to our land, oppressed by thick fogs during the winter and withered by a merciless sun during the summer afternoons. The verses of a poet from Bologna helped me to put into words the mental image of a lazy day in June.

Slightly hazy pale yellow color, small white head, lace. Grainy, a bit fruity and yeasty aroma, kind of malty and spicey too. Light bodied. Grainy malty with nice German style hoppyness. Lingering bitterness and some sweet maltyness in the finish. You don’t expect to drink pils from the bottle like this.

Bottle shared at Jay’s music&beer mixing bash. Definitely much more hopped-up than the style suggests, lots of herbal and floral notes with some peach fruitiness too, lightly bready, not much space left for the malt character really, decent brew but not really a classic keller.

Bottle shared. Slightly hazy gold with a pillowy white head that lingers. Light fruit-forward nose with peach and apricot, some grassy notes and some dry yeast. Really creamy mouthfeel, very comfortable. Earthy hops with a touch of pepper on the finish. Quite enjoyable.

ASPETTO: giallo chiaro, schiuma bianca, fine e persistente. AROMA: floreale e un buon luppolato, ma poco intenso. GUSTO: appena tolta dal frigo, si percepisce solo un leggero amaro. Portandola a circa 8º, iniziano a liberarsi più sapori. Amaro sempre presente, buon luppolo. Sentore di scorza di pane soprattutto sul finale. Lascia la bocca ben pulita. Birra leggera e pulita. Ben fatta per il suo stile (che non è però tra i miei preferiti)

Bottiglia @ Simei 2015, Milano. L’intensità olfattiva è elevata e la persistenza olfattiva è discreta. Il cappello di schiuma a bollicine fini ha una buona tenuta e si fa ricordare per i merletti sul vetro. La consistenza del liquido è opalescente. Il colore è giallo dorato///ambrato, quasi torbidino. Il corpo è pieno. L’amaro è forte. L’intensità gustativa è elevata e la persistenza gustativa è buona. Le sensazioni boccali finali sono di secco e di un bell’amaro, nonostante la bassa gradazione alcolica. Il finale è amarognolo. Le sensazioni in bocca sono di miele d’acacia, mandorla, pane tostato, orzo e luppolo.

Pours hazy golden with a white head. Aroma has notes of malt, fruit, grain, grass and hint of spices. Taste is light to medium sweet and light bitter with a long grassy and fruity finish. Body is light to medium, texture is thin, carbonation is soft.

Color oro pallido, con leggera schiuma evanescente, già visivamente non è il massimo. Lieve aroma erbaceo, non particolarmente gradevole rispecchia in pieno quello che ho trovato al palato. Assaggiata due volte alla spina e una in bottiglia per conferma, si è rivelata veramente deludente.
