Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Editor’s note: Alcohol content varies from batch to batch, and has ranged from 6% up to the 7.5% of the most recent batch.

Bouteille version 2006. Une robe trouble de couleur brunâtre qu’on a aperçu dans le fond de l’évier (pas autant que la Panil Blanche). Un nez suret avec des cerises et du bois mouillé. C’est tout de même surprenant. Une bouche agréable et piquante. Des notes boisées se mêlent avec des notes de cerises et des brett. La finale est agressive et pique le bout de la langue à la manière d’un vin frizant.

Mon ami Yan aime le risque. Il achète cette bouteille, vintage 2006, un peu poussiéreuse mais élégante et irrésistible, il va sans dire. Yan a la brillante idée de penser l’ouvrir dans l’évier. Bonne idée: dès la décapsulation, le liquide s’empresse de sortir. Toutefois, rien de bien catastrophique, il nous reste deux beaux gros verres de ce liquide presque brun ou rougeâtre, c’est selon. Au nez, cerises, bretts et parfums terreux fortement agréables mais aucunement renversants. Au goût, d’autres fruits accompagnent les cerises. Les levures apportent des nuances de terre et de cuir. En bouche, le liquide est pétillant, mince sans être aqueux. La finale est très sèche, sauvage, non-agressive. Étonnante. Plutôt facile à boire. Rien de désagréable sinon son prix assez fou. Anyway, merci rodenbach99 pour ce verre gratisse.

After some gushing from this 2006 bottle, it pours a cloudy colour of rust. The foam is small but long lasting. The lacing. .superb. The smell is dry and musty. Very much wine like for the dry and musty as in there’s a lot of Brett character. Pretty amazing aromas in my book. The taste is just as good as the smell. Strong Brett complimenting a super dry wine like taste. Mildly tart, earthy as all hell, a treat to drink. Good mouthfeel. .the carbonation is a bit high, imho. 9 years old and quite entertaining.

30 May 2015, tap at Firestone Walker Invitational Beer Festival. Ruby. Nose is cherry juice. Thin body and faintly fizzy. Cherry juice and bitter. Nice. Too heavy to be refreshing but very good.

(Year 2009) dark red with no foam. Aroma has cerry notes and wood is present in the nose (it comes from cerry pit). Aged in steel barrels coming from low fermentation beer. Drinking it you can feel fruits and vanilla while it leave a persistant sour taste at the end.

A hazed burgundy red ale with a thin off white head. In aroma, corky cherry malt with light lactic and funky character. In mouth, a tart cherry ale with light corky notes, tannins, a bit harsh. Sampler at Battle of the Belgians at Jimmys 43.
