COMMERCIAL DESCRIPTION
Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

Gushed all over GT’s Siberian Tiger rug. "Fuck You" says Italy to GT’s inconsiderate ways. Red-chestnut, beige large-bubbled ring for a head. Acetic, moderate cherry nose, bit of manure, dark chocolate. Flavor is cherry, bit green vine, sugar clinging to teeth, metallic carbonation throughout, slight band aid in the finish. Phoned in fruit sour from Italy.

Bottle shared at my 30:th birthday tasting on May 5 (30 ĺr av Surt). Courtesy of Larsniclas. Gusher! Pours hazy dark deep red with a big fizzy pinkish white head that is rather quick to dissipate without leaving much trace on the glass. Smell is sweet and sour with burnt sugar, cherries, vinegar, lemon juice, lemon zest and hints of raspberries. Taste is sweet and sour with wood, charries, red currants, hay, burnt sugar, grapefruit juice, lemon zest and hints of vinegar. Mouthfeel is tart, tiny dry, tiny watery and light to medium bodied. Finish is sour and tart with cherries, red berries, hay and lemon zest.

Bottle at "30 ĺr av surt", on May 5, 2012 in Göteborg. Batch # 2008/E. Brune col beige. Arôme sur un bouquet aigre modéré et fruits noirs. En bouche, palais est léger avec un manquement flagrant au niveau du pétillant, moyennement aigre, pointe fruits noirs, cerise et raisin le tout étant mis en retrait pas une carbonnation qui n’aide pas le tout ŕ se développer. Dommage car il y a un bon potentiel.

Murky brown color, small brownish red head. Brett, acidic, sour, berry scent. Sort of acidic, somewhat lactic taste. Acidic aftertaste. Spritzy mouthfeel, low to very low bitterness.

Sour cherry, oak, and sweet cherries are resent in the aroma and taste. Extra aromas of burnt sugar and sweet vinegar brine. Very solid sour, but missing a bit of body.

(Bottle) Pours muddy brown with a sand colored head. The aroma holds cherries, mould, lacto, salt and limey citrus. Malty background. The flavour is light sweet to dry and medium acidic with almost no bitterness. Notes of cherries, lacto, mild citrus, fresh wood and malt. The mouthfeel is round and light tart with a light carbonation. Near medium bodied.

30 ĺr surt. Pours murky raspberry red mahogany with a small off white head. Aroma is stable sour wet blanket fruity. Flavor is a bit flatfruity sour cherry tart and slightly bitter. Finishes bitter sour and cherry fruity.

Assaggiato la versione maturata in barrique. Essendo la mia prima birra acida ho poco metro di paragone...comunque un acido non troppo fastidioso che non rovina la bevuta...non mi sarei aspettato un tale equilibrio.
