Batch 1 bottle from the depths of the shared Makke/Bir&Fud cellar - grazie Manuele! Shared with tarheels86 and the gang at Makke. Bright and clear golden color, white head. Aroma of very strong dust. Taste is sour grapefruit, bread, white pepper, summer fruit. Very nice stuff.

Bottle shared at Brasserie 4:20. Murky yellow pour with no head. Sour citrus aromas. Pear, sour fruits, and mild citrus. Goody body. First time I really experienced a pear beer and it did not disappoint..

01/02/2012 Bir&Fud (500ml bottle). Grazie a Manuele Colonna. Color pesca giallona, lievemente torbida, schiuma quasi assente. Al naso intensi sentori di lieviti selvatici, stalla, formaggio, quindi note di pera e vaniglia. In bocca è morbida, perfettamente equilibrata tra la componente acida e quella dolce della pera, che regala sensazioni simili a un perry o a un sidro. Corpo medio, carbonazione soft. Lambic delicato e sopraffino, morbido nonostante la giovane età. Ne ho un’altra bottiglia da parte, promette davvero bene!

This was quite the surprise. An italian sour with pear - how great is that! Lovely pear and vanilla mix on th nose with enough funk to please my sour tooth. Palate is light and gentle with very little fizz but it works well. A gentle and well ballanced sour and a must try if you can find it. Ma Che Siete Venuti A Fa has it, as does domus bierra.

50cl bottle. Pours a hazy bright peach color with just a thin ring of white bubbles. The color on this one reminds of Fou Foune, and it’s a good start. The nose is very acidic, Cantillon style. Some funk, must and wood. Some citrus notes also. But most of all is sourness and fruity presence. Not pears explicitly though. Taste is much similar: very acidic and fruity, with some funk and lemon zast. Green sour apples, too. Peachy-like fruitiness and the sharp acidity of a Cantillon Kriek. Mouthfeel is medium and carbonation is low. Overall, this reminded me alot of some aged Fou Foune I’ve had: same level of sharp acidity and peachy fruitiness. It was quite alot since I’ve had my last fruit Cantillon and this reminded immediately of those: world class, definitely.

Thanks Manuele! tepid gold, thin gravity bubble white head. Nose of light grape skin, earthy and peppery with hints of pears, also some deadening oak and a distracting acetone. Flavor is more grape and oak, light acetic acid that brings red fruits. Body doesn’t help the murkiness, oak and acetone burying a lot of the fruit brightness, and little carbonation to help alleviate this.

500mL from Ma Che Siete. The pour is a clear gold with not much of a head- maybe some flurry of bubbles. Light, sticky lace emerges. Aroma is hugely lactic acid, big buttery bourbon, vanilla, oak, butter, Flemish red funk, cotton candy, lemon. Huge amount of fruity funk. As it warms it gains orange florals and sorbet but also a flash of wet mushroom. I’m really liking this nose. The taste is tart, lemon, lactic, soft, spicy, mouth watering lactic sourness, oak, buttery bourbon. Really an incredible sour beer. Not unlike Cable Car in some areas. Reminds me a lot of Goose Island Dominique but more intense. Bright acidity, lemon, citrus, unripe orange. Slight acetic spicy sourness. Wow!

Pensavo fosse un blend, invece è un lambic vero e proprio creato dallo stesso birrificio, peraltro perfettamente riuscito e godibilissimo. Aroma intenso e particolarissimo, mentre le note fruttate attenuano l’acidità.

UPDATED: MAR 14, 2011 Per me che non amo particolarmente i lambic è stata una bella scoperta. Bellissimo colore ambrato con poca schiuma. Aroma sorprendente e deciso. Leggermente liquorosa in bocca e mai eccessivamente acida, sembra bilanciata alla perfezione. Ottima davvero.

Lambic perfettamente equilibrato e mai eccessivo, acido stemperato dal dolce (pere, giuggiole) mai stucchevole, si sente la permanenza in botte con gredevole nota tannica.
