COMMERCIAL DESCRIPTION
In the past era, hard working rural "Saisonniers" consumed 5 liters per day of this style beer. We re-created it for today’s modern worker using Belgian yeasts and sour mashing for a refreshing spiceness and acidity to enliven your palate. Bottle conditioning leaves some sediment, so decant by slowly pouring into a wide mouth glass. Refill this bottle at your favorite local brewery.

UPDATED: JAN 15, 2007 Bought at Lifesource organic grocer, Salem OR Love the old style swing top brown bottle and simple label, good plain presentation. Quite a "pop" when opened. woah this one really needs a very very careful pour, the massive slightly off white head dwarfs the beer even after a slow pour! The actual beer is a soft , sligtly hazy golden honey colour and quite attractive Very dried fruit aroma, especially apricots and tangerines, peppery and spicy, papaya fruit very delicious scent indeed fruity , bubbly and dry at the finish, more orange and lemon peel than apricot in flavour and slightly more spicy, some blackberry flavours in the back, slighty sour undertones. Very nice and rather special on the palate, its very well naturally carbonated , but at the same time the mouthfeel remains slightly thick and even creamy, well done. WOw i like Bison but never expected anything like this, a very nice drink, kinda spendy but worth it!

Pale orange, rocky foam with an exotic wet/spicy aroma, kind of exagerated Dupont characteristics like that dry orange peel flavor but still pretty on target. How much %, anyone know?

New in town. Aroma is herbal, floral, slightly sour and holds some vaguely citrus notes. Body is a soft golden yellow and a firm, thumb thick white head perches atop. Fore is lightly sour with both floral and herbal notes. some sweeter citrus runs through the middle ranges. has a creamy feel and an almost cream-like flavor toward the finish. Finish is abrupt and light leaving a tart, but mellow flavor on the tongue. Pretty tasty.

UPDATED: AUG 1, 2006 16 oz. flip top bottle. Medium to deep amber colored and clear although there was a generous dose of yeast left in the bottom of the bottle. Everlasting off-white head with pleasant lacing. Aroma is lightly sour with herbal hops throughout. Medium bodied with a pleasant carbonation. Tart and hoppy finish, definitely a decent dose of noble hops in this one. One of the better Bison beers and organic beers I have had in general.
