COMMERCIAL DESCRIPTION
Cocoa-Bretta is an organic collaboration cheer that combines Bison’s award winning Chocolate Stout and Logsdon Farmhouse Ales’ Bretta. This stout beer was brewed with cocoa, multiple yeasts, finished with strains of Brettanoymces, and then keg conditioned with pear juice.

On tap at Capitol Beer, Sacramento. Pours near black with a nice tan head and a chocolate and coffee aroma. There is a sour dark molasses flavor with a dry finish. Complex and tasty.

Tap at Capitol Beer in Sacramento, CA. Pours black with reddish orange glints a a creamy darker tan head. Mild sour/tart aroma with a touch of chocolate. 2nd smell was very smooth darkish chocolate. Med + body. Flavor is mixed chocolate, hop, lightly sour. I’d say tart is not in it. Mildly bitter chocolate, some light brett, and some fruit for the finish. Just excellent.

Draft. Black beer with a tan head. Yeast and coffee aroma. Coffee and yeast flavor with brett and light dark malts. Medium bodied. Coffee and light brett/light tartness lingers with light yeast and light red fruit.

Draught @ Brouwer’s Café:   Deep brown, thin to moderate sandy head, sparce lacing.   Tart nose, slight cocoa.   Barnish on the tongue, immediately followed by a dry cocoa and a very tart aspect.   First thing is needs more body, more chocolate.   Its very light, and doesn’t translate too well with the cocoa.   Really needs to have a heavier body with its tartness and cocoa.   Body and mouthfeel are moderate.   Not sure that I get pear juice, but it does have a slight pale fruit skin aspect that I find in many large stouts.   Finishes a bit barnish, cocoa, tart, but not with much body or chewiness.   Needs to be bigger on so many levels.

Draft from 16 Tons Cafe, Eugene. Pours opaque black, little tan head. Aroma malty, chocolaty, sweetness. Mouthfeel is creamy. Finish is really big, raisins, dtaes, sweetness, leather, slight tartness which increases as the beer warms and opens up. Different but nice.

Dark brown in color, hazy with a thin head. Interesting flavor and finish. Big chocolate sweet flavor. Light yeast aroma and flavor. This was different and sweet.
