COMMERCIAL DESCRIPTION
This cider is produced and fermented using the farm style method, relying solely on yeasts from the natural micro flora contained in the apple’s skins. No cultured yeast is used in the production of this cider. The result is a golden, lightly sparkling dry cider with a wine like texture and an earthy taste. Some spiced apple notes may also be present.

Cask at old toad. Pours light and clear pale yellow. So clear it looks like slightly rusted water. Nose and taste feature dry earthiness, slight clove, and a hint of apple. The earthiness makes it tough to gulp down. Body is light. Ok I suppose, but I don't think i would search this out.

(bottle - 22 oz) Rating #3200. Clear gold champagne pour with a fizzy white head. Aroma is light apples with a light pear note. Flavor is very fruity with hints of pear and spice. Didn’t get much of the wild factor in the flavor but that’s not a big deal. Cider was really nice besides that.

Bottle from the New Amsterdam Thanksgiving Market. Below freezing temps endured for the sake of it. Took a bottle of this & that home to validate my findings, but managed to type some out in the elements.

4.8%abv. Clear, hard plastic sampling glass. Light amber body.
Sweet, floral, perry nose. Doesn’t smell very wild.
Taste is more sweet then bitter. Juicy. Decently tannic. Light tartness, moderate acid. Small wine. Finishes dry, with a slight grainy aftertaste.

Head cidermaker said they filter everything profusely. Didn’t get much wild character out of this. Drinks very decent regardless though, & at a good price.

Sampled this at Campground Brewdown 2. Pours a clear gold with a thin white head while pouring but it fades quickly. Soft apple, sweet and light champagne yeast. Soft apple, sweet and pulpy. Long apple flesh, chewy apple. Soft sweet light tartness.

Bottle at Brewdown. Pours yellow with white head. Nose and taste of apple skin, white sugar and apple. Sweet. Medium body. Smooth.
