COMMERCIAL DESCRIPTION
For the winter season, we traditionally make a Belgian-style Dubbel; a rich malty pleasure that is the perfect accompaniment to those long winter nights. Last year we decided to play around with the concept and see where it might take us. After much tinkering -with a number of unique ingredients combined with wood barrel aging- we arrived at this wonderful juxtaposition of fruitiness and maltiness which harmonized magically to produce this delicious winter warmer.

The designation of "Grand Cru" originates from the Burgundy region of France. Brewers have taken the term and applied to it more elaborate, aged and reserved versions of their beers. Our Belgian-style Dubbel -a great beer itself with a loyal following- has been taken to the next level by the careful blending and aging techniques. We believe we’ve created a classic to be enjoyed throughout the winter months.

For 2010, we offer a very limited release of (only 48 barrels) our Winter Grand Cru. In this batch, we’ve added over 100 pounds each of locally sourced Zante Currants and Black Mission Figs. We aged 20% in used Bourbon barrels for 12 months - in which time the warmth of the Bourbon, along with toasted oak and vanilla flavors were released from the wood. Whole Vanilla beans compliment the wood and bring forth a velvety smoothness and richness. The fig flavor is forward on the nose along with the bubble-gum/banana ester derived during fermentation. The taste starts with the rich sweetness of fruit, carries through with a rich mellow center and finishes dry, allowing for another glass as you sit by the cozy fire. Á votre santé!

Pairings: Lamb, wild game, charcuterie, pâté, duck, rabbit, braised short ribs, cherry reductions, bread pudding.

surprisingly good beer from a brewer I am admittedly not a fan of. got to sample this without dropping $10, though. Big booze and barrel character but not overly hot. light fruitiness, oak and yeast comes through as well.

Sampled on 6/24/2011 on tap at Beer Revolution. This abbey dubbel pours a medium to dark brownish red color from the tap. Small to medium sized white foamy head. The aroma is caramel, dark fruit and sweet with bourbon and wood. A medium bodied dubbel. The malts are caramel, fruity and sweet. The hops are earthy and herbal. Some wood. Nice carbonation. The bourbon flavors come in mostly at the finish, the beer is a touch boozy, but not that bad. I was hoping that the finish would be a little fuller, seemed a touch on the thin side. Mouthfeel is full. Finish is clean and smooth. Aftertaste is slightly sweet.

On tap at GABF. Pours with a clear bronze body with a massive and lasting tan head that leaves excellent lace. Strong barrel aromas with vanilla, cinnamon-apple crisp, bready and caramelized. Mild raisin like esters. Flavors are of bourbon and oak. Some tannin, dry apple notes, bready. Medium bubbles and body.

Bottle. Pours hazy brown with a slight amber tint and medium, creamy beige head; good retention and lacing. Aroma is caramel and toasted malts, light yeast, bourbon, earthy hops, figs, dates, and some sour/vinegar notes. Flavor is sweet malts, sour fruit esters, earthy hops, and vinegar towards the end; faint bourbon undertones with a sweet finish. Medium body and low carbonation.

Bottle. Pours a dark amber color with a small off-white head. Has a fruity sweetish malty vanilla woody aroma. Sweetish malty bourbon vanilla woody flavor with weak yeasty hints. Has a sweetish malty bourbon vanilla finish.

Bottle. Pours dark brown with a medium, frothy light tan head, medium retention with good lacing. Aroma is vanilla, sweet oak, dates, plums, bourbon, cookie and toast malt with light nutty tones, Belgian candi sugar, and light earthy hops. Flavor is malt forward with candied fruits, oak, bourbon, vanilla, light hops and bitterness with a sweet finish. Full body and medium carbonation.

Tap: dark reddish-brown pour with large creamy, light tan head. Aroma is dusty with woody oak, chocolate, cola, cherry, and vanilla. Flavor is cherry cola, vanilla, a light oaky bourbon and a very slight yeasty funk. Palate is mostly sweet and creamy thick. Overall an interesting beer but the flavors never seem to settle, probably could use some age to gel the flavor.

Thanks to bu11zeye for sharing this bottle. Dark brown-red pour with a tan head. The aroma and flavor are both very complex and show a lot of barrel-aged notes. Aroma is maple, cherries, toffee and bourbon. Flavor is maple, vanilla, brown sugar, bourbon, oak and caramel. Medium mouthfeel and medium carbonation.
