For the winter season, we traditionally make a Belgian-style Dubbel; a rich malty pleasure that is the perfect accompaniment to those long winter nights. Last year we decided to play around with the concept and see where it might take us. After much tinkering -with a number of unique ingredients combined with wood barrel aging- we arrived at this wonderful juxtaposition of fruitiness and maltiness which harmonized magically to produce this delicious winter warmer.

The designation of "Grand Cru" originates from the Burgundy region of France. Brewers have taken the term and applied to it more elaborate, aged and reserved versions of their beers. Our Belgian-style Dubbel -a great beer itself with a loyal following- has been taken to the next level by the careful blending and aging techniques. We believe we’ve created a classic to be enjoyed throughout the winter months.

For 2010, we offer a very limited release of (only 48 barrels) our Winter Grand Cru. In this batch, we’ve added over 100 pounds each of locally sourced Zante Currants and Black Mission Figs. We aged 20% in used Bourbon barrels for 12 months - in which time the warmth of the Bourbon, along with toasted oak and vanilla flavors were released from the wood. Whole Vanilla beans compliment the wood and bring forth a velvety smoothness and richness. The fig flavor is forward on the nose along with the bubble-gum/banana ester derived during fermentation. The taste starts with the rich sweetness of fruit, carries through with a rich mellow center and finishes dry, allowing for another glass as you sit by the cozy fire. Á votre santé!

Pairings: Lamb, wild game, charcuterie, pâté, duck, rabbit, braised short ribs, cherry reductions, bread pudding.

I sampled the 1 pt., 6 fl. oz. (22 oz.) bomber bottle. This beer features a medium brown body with a large, long-lasting, light-tan head. It also left some great lacing on the glass I used. It features a big nose, with plenty of dark cherry, raisin, banana, caramel and alcohol aromas. This beer is a blend that tastes much like its Belgian Dubble alter ego going in—with a loaded, syrupy-sweet caramel malt spine—that ripens into a host of dark fruit, earthy oak, and vanilla spiciness, before executing a prolonged, dry finish. It’s a tasty, slow drinker with a big 9.0% ABV.

Bottle, 1 pint 6oz. @Naintré, with dad and mom. A very dark brown sparkling beer with a big beige creamy head ; average retention. Roast, toast, blackberry, blackcurrant, wood, nut, vanilla, prune. Medium sweet, light to medium acid, dry bitter note, light refreshing, warming background. Medium body, average texture, light oily, average carbonation, sweet acid medium finish. Overall, a beautiful beer with a stormy fruity aroma ; makes me think of a flemish sour beer ; really good ; nice woody touch.

A good, interesting beer, tart but not sour. Pours a nice deep red with a tan head. Smells of cherry, strawberry and tobacco. Taste is tart cherries and apple, with a bit of smoke In the finish. Had in the bottle.

0.65 bottle from Pivoteka Zagreb. Shared with Vi?nja and musicians. Malts, wine like, alcohol, dry fruits, fruit jam. Acidity, roasty, malty, sweet background, some chocolate. Vanilla is present, bourbon maybe in the finish. Medium to full body.Very nice and complex.

UPDATED: JUL 25, 2015 Hazy dark brown color, small tan head. Lovely aroma, lots of dark fruit and chocolate, some wood, bit boozy. Strong sour kick right into your face, not well balanced. Cherry. Finish is extremely long, chocolate and vanilla appeared at the end. Medium to full body, soft carbonation. It soubded better than it is. //vrutak

Bottled 650ml. -from Vrutak Zagreb. Dark brown coloured, medium to big sized brown head, raisins in the nose. Vinous malty, caramel, raisins, figs and vanilla with discreet touch of wood. Rather dry finish with hint of alcohol. Not bad at all.

On tap at Southern Filling Station. Pours dark ruby brown. Nose is black cherries, molasses, dates, light chocolate, vanilla, and cloves. Sweet and nicely tart. Medium to heavy body, syrupy and a touch acidic. Overall, this is a complex, nicely balanced, and tasty beer.

surprisingly good beer from a brewer I am admittedly not a fan of. got to sample this without dropping $10, though. Big booze and barrel character but not overly hot. light fruitiness, oak and yeast comes through as well.

Growler. Pours opaque dark chocolate brown with a typical light tan head. Bold aroma has fruity, bourbon, woody, and subtle malty notes. Flavor delights with fruity, caramel, bourbon, woody and fruity notes that dance across the palate. Firm, smooth texture has some good fizz; finish is fruity and woody. Splendid!
