Saison (French for “season”) is typically made in the late winter for summer release because the beer is meant to be stored, or lagered, and then served during the harvest as a thirst quencher. Using malts and a mash temperature with a high degree of fermentability, this one tastes a little more Euro than most American Saisons, with very little residual sugar for a super bright, refreshingly light finish. Ginger and cardamom come have very complementary flavors that accentuate the dryness of this beer. Grain of Paradise is a very ancient brewing ingredient, not commonly seen anymore, used for its unique flavor, it provides zesty white pepper heat and sharpens the aroma. Hops vary, but we favor those with a German-leaning perspective. Bitter orange peel is traditional but we also add sweet orange peel to provide additional fruit in the nose without adding sweetness.

Draft. Pours hazy gold with thin white head; decent retention and good lacing. Aroma is bread and cookie malt, spice, and earthy hops. Flavor is sweet malt, spice, and light citrus hops. Medium/light body, medium carbonation, and low warmth.

Tap. Pours hazy straw yellow with a small, fizzy white head, medium retention with good lacing. Aroma is light biscuit and straw malt with black pepper and spicy hops. Flavor is malt dominant with medium hops and bitterness, black pepper and a dry finish. Light body and warmth, medium carbonation.

Growler served in a tulip. Hazy golden orange with a medium sized off white head. Ginger, spice, yeast and lemon citrus aromas. Fluffy, light sweet flavor. Light body, bubbly carbonation, light yeasty texture, and a dry finish. A well made saison.

Hazy Golden-Orange pour with big glistening white head. Nose is spicey-pepper or ginger. Lots of fruity yeast notes, slight citrus, light bodied. active carbonation. quick bitter finish. An average saison. Agree with other rater that it is almost more of a wit.

Draft at Toad in the Hole. Cloudy orange with medium melting head. Pepper, overripe fruit, and a squidge of sulfur. Tasty, beery, and coherent with soft sweet malts, light Belgian esters, and pleasant phenolics. Fairly dextrinous and low carbonation for style; a little yeast bite is welcomed to go away. I taste this as if it was a witbier and criticisms ease!

On tap at Monks Kettle. Pours golden with a pretty white head and a fruity aroma. There is a slightly sour fruity flavor with a heavy yeast presence.

On Tap: Pours a clear golden with a minimal white head. Fruity pear/peach and ginger aroma. Nice yeasty flavor with a slightly sweet fruity ginger finish. Medium body.
