The Feral saison is an experimental beer brewed to see what happens when you brew a beer with native WA wine yeast. This beer starts out as a four grain saison in the brewhouse. The wort is then racked into white wine barrels procured from Efeste Winery in Woodinville. At this point, Washington wild wine yeast provided by Efeste is pitched into the barrels. Primary fermentation is completed in a few weeks and the beer continues to age in the barrels for a short while longer. From there it racked to stainless and further matured.

Draft pour at Frankies pizza. Pours a light pale gold with littlebhead. Floral hop aroma. Flavor is really white winish, which comes to no surprise. Lemon zest flavor and minimum spice in the finish. Refreshing. Tasty. Enjoyed this.

Draft at BPP. Pours clear pale with creamy white head. Aroma: lemon zest, cracker, pepper and grass. Lightly sweet start, dry, peppery, somewhat bitter finish. Light body, prickly carbonation. Overall: not sure why it’s called feral, but this is a nice, local saison.

Draft at brbc. Pours a crystal clear pale gold with a loose white head. Sluggish carb. Lemon and mint nose. Creamy medium body with lively carb. Lemony minty white wine body. Dry finish, a little carbonic bite.

Draft @ Brouwer’s. Clearish yellow with a foamy white head and nice lacing. Aroma of spicy/zesty yeast, lemon and light pils malt. Flavor is cereal/toasty malt, citrus and a light tartness. Light body with active carbonation. Very solid Saison, great flavor and drinkability.

Draft at Black Raven. Pours a light clear straw golden with a very tightly carbonated white head. Tannic white grapes, peppery, pear and banana esters, grassy hay undertones. Crisp white pepper, subtle white grapes and oaky tannins, light pear in the finish. Very light, crisp, dry and very approachable. Could see this working really well in food pairings.
