COMMERCIAL DESCRIPTION
First of Black Raven’s barrel aged ’Corbeaux’ series. Brewed as a Farmhouse ale/Saison then aged in french oak Chardonnay and Viognier wine barrels for 4 months. Brewed with barley, wheat, rye, oats and magnum, Styrian Goldings hops.

Clear yellow looks like a pils. Smells funky and lemony. Tastes of spicy oak lemon with the buttery chardonnay mouthfeel. Very unconventional for the style. Where’s the yeast?

Lots of tropical fruit and citrusy wine barrel notes, Some rye and wheat underneath as well as some lemon and oak. Nice nose. Pours golden, white head. Flavors of big tropical fruit, definite citrusy white wine notes, rye and wheat, a little hay and dust as well as soft peppery hop presence. Nice carbonation and with great drinkability and somewhat refreshing as well.

Aroma is a balanced blend of tropical fruit and wine barrel with some light malt character in the background. Could perhaps use some phenolics to balance out the fruitiness, but I think the oak does that fairly well. Appearance is a super clear yellow-gold. Flavor is similar to aroma with tropical fruit, wine and oak dominating. A nice assertive bitterness in the finish helps cleanse the palate. Once again, phenolics are lacking a bit. Perhaps a touch too tannic. Overall a very enjoyable Saison. I am very happy to have discovered this beer when I was in Seattle for NHC. Sprightly gold with a brief, ring of head. Mellifluous, Viognier-inspired, honeysuckle nose with touches of wood and spit of oak. The body is decidedly more woody and zesty, with a strong pepper character and nuances of lemon. Flus with white grape and white pepper. Lovely and intriguing.

Honeysuckle aroma, bright gold. The peppery yeast matched with the ample wine character works great for me. Well rounded mouthfeel.

Draft and Malt and Vine. Stopped there to wait out traffic, and I’m glad I did or this one might have slipped by me. After getting some more exposure to them at Belgianfest and trying this as well, saisons are rapidly becoming a new favorite for me. Poured a hazed light gold with a small, tight, white head. The white wine barrels are noticable through the aroma and flavor of this. Aroma is white wine, a light berry fruitiness, peppery spice, floral notes, and some grass/earthiness. Flavor is more of the white wine, oaky notes, a slight lemon tartness, floweriness, and a spicy, dry, peppery finish. Both the aroma and flavor of this have a quality that reminds me a lot of rose petals, something I haven’t run into much but I really enjoyed.

Draft at Brouwers Big Wood 2009. Crisp golden, haze with pillowy white head. Lacing with sharp bready-yeast nose with metallic iron. Taste is a bit metallic, followed by oaked sour. Off-bitter finish, not awesome.

Draft at Bigwood 09. Hazy golden with nice white head and solid sticky lacing. Cotton candy, wheat, banana, clove, bubblegum, clove and peach...smells great with tons going on. Really highly carbonated. Clove spiciness, wheat, dry for sure, peach, dry peppery notes...I think my one complaint is it is a little soapy or bitter floral.

draft at bigwood. pours a cloudy medium orangey amber. dense creamy ehite head. beautiful nose of white winey lemon, grass, and white pepper. creamy medium body, some active carb but not fizzy or prickly. lemon, grass, pepper again on the mid palate. light lemony finish.
