Saison “Classic Saison” This is a Belgian-style farmhouse ale. The aroma is dominated by fruity esters reminiscent of citrus fruits along with a moderate earthy and floral hop aroma from the use of Noble-type hops in the brewing process. Has a deep gold, hue that is often hazy, and a voluminous head on pouring as a result of the bottle-conditioning and high natural carbonation. The beer is medium-bodied and has a very refreshing effervescence which, along with a fairly low alcohol content of 6% by volume, makes this a beer to be enjoyed on a warm day by itself or with a wide range of foods, whether casual or fine dining. Complex flavors and aromas in this beer are a result of the special yeast used in fermentation combined with the additional complexity added by bottle-conditioning in large bottles for at least six weeks before being released.

750 ml bottle Steve’s Wine Market(University Ave) in Madison, WI (August 2016), served at cellar temp in a Duvel glass. The cork pops softly, but when the liquid pours forth there’s a huge gout of billowy foam topping the very pale straw-gold body, which is luminously bright and veers somewhere between cloudy and opaque...nose is yeasty-musty with light mildew and rain-rotted wood; also notes of lemon zest and a touch of honey or perhaps floral perfume (lavender?)...body is initially rather sweet, perhaps just a bit too sweet for my taste in the style, but some nice mineralic, harder notes appear and a bit of dry hoppiness rounds things out...despite the huge head and bubbling evident in the body, it’s a bit low in the carbonation department, which leads to a light syrupiness or oiliness in the body, and a bit of thinness, but this is the only real "flaw" I can think of. Definitely one of the better American saisons I’ve had.

And a special shout-out is due for this one to Ernest and ClarkVV, whose reviews for beers like this I really appreciate and learn from; I came across something written by one of them about this or another BB Farm product a few weeks ago, read a bit more about some of their saisons, and have kept my eye out ever since - I doubt this would have stood out amongst the many, many other great looking beers at the store that were unfamiliar to me.

Draught at Mikkeller SF. Amber color, white head. Bitter taste with citrus, spices, earthy notes, hops, yeast, ripe fruits, a bit of pepper and grass. Bitter finish with citrus, hops, spices, yeast, a bit of pepper and grass. Excellent saison, as the name says it's true to the roots of the style.

Pours a clear golden with a high head that leaves very nice lacing. Nose is of pepper, honey and light carbonic acid. Taste is pretty dry, fruity, peppery with a healthy dose of cereals. Moderate bitterness. Average body and carbonation for the style. All in all a really good saison that stands up to its name: "Classic".

The beer poured out pale yellow, with a cloudy body, and a large head that was over three fingers thick. The aroma was floral, spicy, and yeasty. The taste was delicate, with flavors of lemon, white pepper, grapes, orange peel, and coriander. The body was creamy in feel, and very light on the tongue due to the heavy carbonation. The finish was very dry. This was a very good, authentic tasting Saison.
