COMMERCIAL DESCRIPTION
Saison “Classic Saison” This is a Belgian-style farmhouse ale. The aroma is dominated by fruity esters reminiscent of citrus fruits along with a moderate earthy and floral hop aroma from the use of Noble-type hops in the brewing process. Has a deep gold, hue that is often hazy, and a voluminous head on pouring as a result of the bottle-conditioning and high natural carbonation. The beer is medium-bodied and has a very refreshing effervescence which, along with a fairly low alcohol content of 6% by volume, makes this a beer to be enjoyed on a warm day by itself or with a wide range of foods, whether casual or fine dining. Complex flavors and aromas in this beer are a result of the special yeast used in fermentation combined with the additional complexity added by bottle-conditioning in large bottles for at least six weeks before being released.

Slight haze to an exuberantly carbonated straw colored pour. Big creamy white head. Plenty of lacing. Malty nose with a slight sulphur note. Earthy yeast. Taste is dry malt lemon and orange. Slightly perfumy.

Pours deep gold into a tulip. Bright white head with excellent retention recedes leaving spot lacing. Caramel and yeast funk aromas. Dry and sharp with rustic yeast, dough and an earthy hop finish.

UPDATED: APR 11, 2016 Lighter shade of golden. Thick and stiff meringue. Very vibrant, perfumey and rustic aromas of airy, plasticlike phenols along with flower petals, lemon, dried pineapple, crackers, and dusty books. Fluffy, expressive carbonation. A slick push of fruity esters and elegant flowery softness cushions the initial surge of peppery and airy phenols. Well integrated herbal bitterness harmonizes with the pepper dimensions and "crunchy" beeswax-like phenols. Immaculately extracted pill malt reveals a rich yet weightless fullness reminiscent of honey-kissed hay and vanilla cake. Relaxed lemony twang underscores the resoundingly succulent Styrian-like hoppiness, which pillars the very clean and dry center with a plentitude of oils. Dried pineapple sugars cause the lips to smack while dusty yeast characteristics firm up the body with considerable rusticity. A peppery, herbal "scratch" gives way to lilac and uncured hay at the soft finish. A blessedly clean, graceful and authentic example that resonates with the soul. One of the finest saisons ever brewed in the USA if you ask me, from a brewery that’s proven to be one of the elite producers of true, old world saison.

Soft, well balanced florals and light citrus. A hint of bubblegum. Hazy golden pour with good head and lacing. Very easy drinking, and just the kind of saison I love. Light tangy finish with a touch of wilderness. Tap at Churchkey.

3/25/16. 750mL bottle from Warehouse. Pretty stoked to see this in Valdosta! Bottle on the shelf and I hear a keg is coming to Craft on Draft as well! Lightly hazed orange pour under a big, thick, tight, rocky white head - the kind where you can pour the head an inch above the glass and it doesn’t flow over the side or break. Lightly grainy, doughy aroma, plenty of citrus, mild funk, subdued spice, grassy, well balanced. Great flavor, mild tartness, citrus, grassy, floral, spice, doughy, grainy, a hint of a metallic aspect. This is good stuff!

Bottle. Pour is clear yellow with a large white head. Aroma is grassy, herbal, light chamomile, dry champagne, and a touch of hay. Flavor is earthy and floral with some chamomile and a peppery dry finish. Really clean and refreshing. Really like the effervescent palate - not overly done though. I have gravitated towards tart saisons lately but this is a really nice non-tart, earthy, floral one. Great beer.
