Pours greenish yellow into a shaker. Head crackles and disappears. Green apple and pear aromas. Dry and sharp with sweet bread upfront turning quite sour and tart in the apple middle before the lasting marshmallow finish.

Bottle. Pours a clear straw gold with no head to speak of. Gentle funkiness and the softest hint of apple flesh. Bright acid, soft funk. Medium bodied, quite dry and lightly funky. Nice dry musky quality, with touches of brett. With this and the regular version I’m not sure if they are intentionally funky and lightly bretty, but they’re quite nice that way. The dry is crisper and cleaner, with more bright funk and clean acid lines. Lingering acid with more faint hints of funk. Very nice.

750ml bottle pour into wine glass. Quickly dissipating fine white head. Nose of dry Apple and hintof year.similar in mouth. Dry, fairly acidic. Very fine champagne like carbonation. Simple straightforward palette with same profile as nose. Fairly quick finish. Average cider more in the table wine category than a sweeter bar cider.

(22 oz from Damon’s) Pours very pale straw yellow. Lots of fizz. Forms a short-lasting fizzy cap. Aroma of apple, sweet, sour, bit of bread, yeast. Mouthfeel lightly dryish and fizzy. Well-carbonated. Flavor of sweet and sour apple, bread, sour yeastiness. OK, maybe slightly better than regular version.
