COMMERCIAL DESCRIPTION
100% Maine apples. Picked after the first frost to increase sugar and decrease acidity. Primarily Cortland apples pressed and fermented in Jim Beam barrels. This wine is a joint effort between Red Mill Lumber and Blacksmiths Winery. Kermit Schott has provided the source and picking of apples and we complete the fermentation.

Served nearly frozen & allowed to warm. Poured into a generic wine glass. Clear, flat, pale soft yellow color. Scent is lightly acidic, with bitter, minty/green fruit. Gummy & a little yeast. Forgettable so far. Taste is mildly tart & slick upfront, turning yeasty & bittersweet. Finish is tart flesh & some tricky whisky tannin/burn. A touch green. Apple becomes more full as it warms. Body is flat & somewhat full, with intermitent sparkle. For 12%, it is not a completly dry, flavorless mimic of simple grape wine that I get so often. Not much burn either, maybe thanks to some barrel rounding & the low acidity. 2008 label states "Cortland, Golden Delicious, Gala, and Honey Crisp. These were fermented in bourbon and rye whiskey barrels." Current label makes no mention of barrel aging, or the apples used. Very good I thought. For the price($7-9), this is excellent.

{750 ml bottle from Lou’s Beverage Barn} Pours clear very pale yellow, looking much the color of white wine. No head. Very, very fine effervescence. Aroma of grape/apple, lightly bready and yeasty. Mouthfeel light and a touch sticky, lightly carbonated. Flavor of apple, alcohol and yeast. Semi-tart but hints of sweetness. Strong alcohol presence is a bit wearing, almost seems like moonshine after a while. No sign of the Jim Beam barrels.
