A blend of sour Golden ales from our Wild cellar. Matured 4, 9, 14, & 20 months in Pinot Noir Oak Barrels with various strains of Brettanomyces (wild yeast), and acid producing bacteria’s Lactobacillus & Pediococcus. Pours a hazy gold notes of citrus, tropical fruit, barnyard, oak barrel and grapes. Wonderfully sour with a puckering finish.

Salmoniform (1227) - Sweet Home, Oregon, USA - MAR 17, 2015
Poured from tap to glass. Gazy golden hue with fizzy white head that settled. Aroma is lactic, peaches, straw, pear, lemon. Mouthfeel is great with a medium light body and crisp carbonation. Taste is dry sweet followed by a tartness throughout. Overall this was a really nice brew.

Draft. Tart fruity apricot and grape aroma. Minimal funk but thoroughly sour. Crisp apple and buttery oak notes. Special beer.

Tasted on 8/31/13 from a capped 375mL bottle, big thanks to Curtis for sharing. Pours hazy orange with a thin white head that slowly recedes to a thin collar of lace. The nose is nicely sour lemon pith, white wine vinegar with some funk, and a nice vanilla note from the oak, with just a hint of light bread malt. The flavor is very crisp and sour, less funk and earth than on the nose, with just a bit of light vinous fruit and vanilla oak. The body is medium with some tannin, average carbonation, and a long, very sour finish.

Bottle... Pours clear and golden with a small, creamy, white head. Decent retention. The aroma features citric notes, stone fruits and yeastiness. Full-bodied with a creamy mouthfeel and lazy carbonation. The flavor is sour, fruity and a hint bready. Crisp, tart, citric finish. Very nice. Bottle shared by landhoney!

Pours a full haze golden, medium white foam. Nose is excellent sweet cream butter, pineapple upside down cake, rich Brett C. Taste is tart, refreshing, some pineapple juice, pina colata, lime. Palate is effervescent

Bottle share thanks to beechner224. Tart, sweet, sweet tart, fruity, sour. Lightly hazy pale orange golden color, small head. sour , fruity, sweet tart, smooth, malty backbone. In response to Dr. Beechner...nœbody cares what else that guy drank that night. Done.

Bottle in trade, thanks to little bro for giving ok to drink. Pours an orange color, white head. Aroma is tart, sour, fruity, yum. Taste is lite, not too sour, thought would be stronger/more sour. It is more fruity than sour. Real easy drinker. Could drink this in my pool all day. Thanks mike! And this guy below me? What is he talking about? DrewFace, thoughts?

Translucent gold-amber, thin puffy white head fizzes, laces well, small but lasting. Moderately bright nose, light peach dominated by the yeast, a heavy brett nose, dusty. Similarly bright nose, more peach, considerable leathery brett, moderate acid and surprisingly high oaky bitterness through the mid, lightly vegetal even. Moderate body finishes slick, undercarbonated, coating the tongue and lightly oppressive.

Pour is a caramel amber, transparent, with a tight white head. Nose is quite bright, lots of peach aromas, leathery brett, lightly dusty. Taste is also fairly bright, lots of peaches, brett is strong, dusty brett, notes of leather. Light body, well carbonated, a bit oily. Flavors are bright and well pulled together.
