Mild carbonation, especially for a Saison, and a soft, cottony white head that left a thick lace. Nose of orange-citrus, esters, pineapple, yeasty bread, and pepper. This is THE smell of summer for me. Flavor is fruity/estery and the pepper quality comes out even stronger to the point of becoming slightly phenolic after a while. Some medium hop bitterness helps smooth that out. Low acidity level. Alcohol heat gradually builds. Finish is clean and dry. Mouthfeel is quite full and lacks some of the lively effervescence of a conventional Belgian Saison. Highly enjoyable but seems young overall. I could see this improving very nicely with some time stashed away in a big old bottle.
