Brewer DeScription: This beer is a collaboration brewed between Paul Vaughn and David Sakolsky of Blue Lobster.

It is a 7.8% Biere De Garde brewed with Tennessee grits and aged 10 months in Arrington Vineyards Port barrels with a mixed culture. It has multiple brett variants and bacteria.

Finally getting around to rating this as Im on my last bottle and this broke ass brewery is finally a thing of the past. Anyhow Paul’s Boutique pours a slightly hazy ruby tinged sienna with a slight khaki rim of foam. Nose is a mix of berries, musty malt, port wine and wet basement funk. Palate follows the nose iwth a nice line between jammy fruit and dry musty funk. Layers of mushroom, cranberry, hay, cherry pits, port soaked wood and a lingering acidity make this a tasty treat ! Thanks Paul and Dave for making this ! And special thanks to Mr. and Mrs. Benoit for closing shop and showing the world that bad business owners do not survive.

pours a translucent amber brown, aroma of oak, brett and funk. Taste is slightly sour, slight vinegar, apples, cherries and oak. light body yet pretty flavorful.

375 ml bottle purchased locally. Murky reddish brown pour, love that color. Aroma of red wine tannins, fruit, Brett, funk, slight vinegar. Taste follows nose with some woodiness, pungent dark fruit, and earthy yeast. Leaves a bit of a zing on the back of the tongue. Wonderful beverage!! ---Rated via Beer Buddy for iPhone

Bottle @ Armin’s apartment, courtesy of a real fucken chill dude. Pours a sort of murky, deep orangish brown appearance with little head. Super spicy (cinnamon/nutmeg), thick plum/dark grape, acetic, quite oaky aroma. Kind of like an Oud Bruin. Fair amount of vinegar tones, lot of oak and tannins, lot of dark fruit. Black cherry, plum, red grape. Carbonation is a bit dull. Nice, twangy aftertaste. Fun to drink.

Pour out of 375 mL bottle, thanks Aaron! Very hazy dark red pour with fizzy off white head, aroma brought notes of red fruit, oak, lemon, hints of vinegar and acetic acid into a bit of spice, cinnamon, slight earthy tones. Taste is a mix of acetic, vinegar, hints of earth, slight grain into earth, slight spice, cinnamon, finishing fairly sweet, slightly tart.

375ml bottle shared by AirForceHops @ RBNEG. Pours muddy brown with reddish hues with no head. The nose of sour grapes (appropriate if one knows the back story to this brew). Swiped verbatim from puboflyons. To good not to use again. Also, scents of wet oak and fruit juice that’s beginning to "work". Sweet/sour flavor with more tart fruit flavor. Nice balance.

$13.00 for a 375 ml bottle. Shared at the RBNG. Murky brown color. Aroma of herbal funk, tart berries, dirty earthy malt and oak.

Yeasty, oaky, hints of brett with a good about of fruity sweetness. Lingering oak and tannic grapes. Really nice complex flavors. I guess you could cellar it, but after 10 months in barrels it tastes pretty good right now. Another fine brew from the former brewer, Cheers Dave!

Thanks a lot to Airforcehops for the share. Really great beer. Pours a bit of a murky brownish color which isnt great but the aroma is heavy vinous grapes, oak, lemon, really rich complex malts and a balance that is great. Hopefully Dave creates more beers like this once his place is open.

From the 375 ml. bottle. Amber brown tone with reddish hues and short lived tan head. The nose of sour grapes (appropriate if one knows the back story to this brew). Caramel malt and Brettanomyces yeast also can be picked up. Light body. The taste begins with a modest roast malt character but the sour and tart sensations really roar in quickly at the end. Might have better after some cellaring.

UPDATED: MAR 29, 2014 Taste at RBNG, thanks Chris! Pours cloudy brown with a bit of white head. Smells of sour cherries. This is nice and smooth and not too sour at first, finishes sour cherry. Great!
