COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Best before June 2014.
Appearance: Opaque black body with a thin tan/brown head. Looks like an imperial stout should.
Aroma: The aroma is a bit restrained but comes off fruity (cherries?) with hints of milk chocolate and bourbon. I wish this were stronger.
Taste: There is certainly a fruity presence to this that reminds me of cherries on the intro. The mid-taste is rather bland, slight creamer flavor with a hint of the overlying fruitiness that leads to a mellow finish with muted flavors of chocolate and bourbon. While this isn’t excellent, I wish the flavors were more pronounced, I am rather happy with how balanced this is and lacking in alcohol flavors despite being 10% and aged in bourbon barrels. So that’s a plus.
Palate: Thick and creamy.
Overall: I love the subtlety of this and maybe it’s what I needed without knowing. I’m so used to intense barrel aged beers either heavily skewed towards the barrel notes or the base beer that I have a hard time adjusting to this. I really like this beer and feel it is well worth anyone’s time and money to buy one.

UPDATED: AUG 30, 2014 Batch 14 at cellar temp in a tulip. Poured mocha black with a 2 finger coffee colored head. Okay lacing. Smell is dominated by chocolate followed by espresso beans and vanilla. It’s a nice roasted character. yeah, lots of chocolate, hints of lactose and sweet bitter finish. No fruits, a lot of oak actually in the middle. Solid brew. ---- Update, had batch 15 of this on August 30th, 2014. this batch was pretty much infected. tasted like welch’s grape juice and red wine vinegar.

Pours dark with a lasting creamy tan head. Aroma is roasted malt, coffee, cocoa, and bourbon. Taste has notes of coconut, vanilla, oak, and bourbon. Nice soft mouth feel that coats the tongue and finishes short and crisp.

Bomber. some chocolate, a bit of coconut, and plenty of whiskey in the nose. Dark translucent brown. Chocolate and barrel initial / some metal and more chocolate in mid / final is moderately bitter. Thin-medium body. An imperial stout? Okay. But a bit thin. Lots of good coffee and whiskey. Not a great one.

Bottled. Cloudy black with lace. Nose of bourbon barrel, vanilla, alcohol. Big bourbon and vanilla flavors, oak, chocolate. Nice, not really refined.

Dark black in color with a tiny and quick dissipating tan head. Smells of bourbon, malt and wood. Tastes as it smells but the bourbon taste is less potent than it smells. Kinda thin on the tounge and alcohol isn’t immediately noticed but you feel it a min or so after you swallow it. Very decent beer but nothing extraordinary.

Bottle from bestway. Vanilla, bourbon, and wood come through in the aroma and pretty well in the flavor as well. The base beer is not too prominent here though and lacks some of the roastiness and complexity of some of the more well known versions of this style. The barrel ageing gives this most of its character and depth. There is a faint hint of some chocolate and cocoa malt working in the background. The finish is a smooth milk chocolatey adventure and the best part of the beer. Better examples here but this one is worth giving a shot to.

P: Black with a small tan head that dispenses toward the edges. S: I get a nice nutty smell with chocolate, mollasses, oak and bourbon. T: Very nutty, with a bit of a peanut butter concept, grains in there goes on the having a oak taste with light chocolate and a metallic presences. M: Light and a bit creamy. O: I enjoyed it, easy to drink but this was rather forgettable.

750ml bottle picked up at Beer Run for $11.49, shared at a bottleshare. Medium / bigger body. Light smooth carbonation. Dark brown color. Little tan head. Dots of lace everywhere. Nice oaky wood, very light vanilla. Some chocolate, roast malts. Hint of coffee. Nice roast aftertaste. Light bitter taste, some sweet. Hint of alcohol. Decent imperial stout.
