COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Pour is black with a fairly tight tan head. Nose is lightly charred oak, rich chocolaty and caramel malt with a faint hint of marshmallow and a light acrid burnt aroma barely there. Taste is a bit more sweet. Malts are still very rich but then transition into some sugary sweetness. Barrel and char have a more muted presence up front, the acrid flavor isn’t really there. Body is a bit empty in the finish and lacks carbonation. Feel is soft and creamy but a touch slick.

Opaque and black; thinnish head. Sweet nose. Fatty, milkshake-like texture. Lots of char, tar, coffee and heavy cream flavors. Sweetness is overriding. Pleasant notes of coconut and vanilla.

Great beer, but this is what I like these days. Only the head was a little disappointing. Great ABV, caramel aroma and taste, like an after dinner drink.

Malty aroma dark color full malty taste. Sweet with a hint of hops. Definite bou rd bon character that enhances the beer.

375 ml. as pictured. Pours black with a magenta tint and a small lasting ring of cream. Aroma of raisin, chocolate, caramel and a hint of dark cherry. Front tastes of dark chocolate, dark cherry, and raisin, turning to some merlot, whiskey and dates. Finish has some oak, soy and mild cured tobacco. Medium-heavy body is well balanced, and has a smooth, low level of carbonation.

Bottle to snifter. Aroma is big barrel, sweet bourbon, oak, chocolate and roast. Flavors were the same. Pours black. Medium body and soft carbonation. A good solid take on a BA impy stout.

Pours nearly black, with a nice tan head. Strong barley noise, with coffee and chocolate underneath. Chocolate, coffee and a bit of currant at the front, cask aging comes in on the back with what is almost an alcohol burn, but is just the bourbon flavors. Great beer definitely worth seeking out, as it is much easier to drink than most stouts.

Dark as night pour, thin khaki head. Aroma is chocolates, coffee, and earthy goodness. Taste is chocolates, coffee and oak undertones. Booze well hidden. Very smooth. Very good.

Last offering at the fourth Shrewsbury beer swap on 28th April 2014. A great beer to finish on. A 0.75 litre cork and caged beauty. Pours black with a good head of tanned foam. The beer is all about the over roasted malts and what they’ve done while resting in those barrels. Burnt, smooth yet bitter in nature, it packs a host of malty flavours, dark chocolate being the lead: add the woody notes and some Bourbon hints too. Very drinkable and warming, rich and filling. fortified me for the train journey and walk home.
