COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

375 ml bottle. Pours a black with a bubbly tan head. Immediately smell coffee and bourbon. You get bourbon booze, vanilla, coffee, and chocolate. A little more boozy than smooth. Bubbly carbonation on the palate. It’s very good and would mellow with age.

Bottle. Black colour with a tan head. Flavour is coffee, malt, licorice, hop, vanilla, bourbon, chocolate. Full body. Very nice beer. KRS 080814.

2015.01.03 - Blue Mountain Dark Hollow - 375ml cork and cage bottle in snifter. Aroma (7/10) is exactly as expected. Roasted barley, stout. Appearance (4/5) as expected as well, inky dark brown. Active head dissipates to outer ring and slick. Taste (7/10) is pretty good. Not as complex as something like Bourbon County Stout. This has more of a positive sweetness (as opposed to complex vanilla, etc). This also has a bit more of a tannin bite at the end. More wood than the vanilla characteristics of the wood. Still, quite enjoyable. Not in the same league as BCS but enjoyable in its own right. Palate (3/5) a bit thin and slick, not thick and creamy. Overall (14/20) Not bad. A bit tart, a bit heavy on the tannin / wood and the bourbon itself. Solid effort, though.

Shared bomber, snifter. Smooth and mild palate for a bourbon stout. I found that interesting, but I didn’t pick up the complexity described by others.

UPDATED: DEC 20, 2014 On the Sixth Day of Christmas 2014 the beer gods gave to me . . . a beer that has been well hidden. What a solid barrel aged stout. Pours a thick luscious black with a tan foam head. Aroma of chocolate, roast and earthiness. Perhaps some vanilla and dark fruit underneath. Nice thick frothy, chocolate shake like start with a perfect hop hit and whiskey spice on the backend. Very enjoyable.

Pours an opaque black from the bottle with thin wisp of tan head that leaves light lace. Aroma is roast with hints of chocolate and vanilla behind. Taste is more roast and soy backing up the great barrel notes. Bittersweet finish with nice thick mouth, lasting barrel notes, pretty darn good.

Bottle to glass. Pours a deep brown to black color with a creamy medium brown head. Aroma is light roasted malts, hint of vanilla. Flavor has a slight burnt roasted malts, extremely faint bourbon/vanilla character. Medium to heavy body with a lingering burnt roasted malts a light bourbon background. Decent imperial stout, but wish the bourbon barrel was a bit more up front.

Black pour with tan head. The aroma carries cocoa, vanilla, roast malts and a sweet fruitiness similar to chocolate covered cherries. The flavor is well balanced between the sweetness and the roast. No hops here. The bourbon also isn’t pronounced enough to be picked out.

Need to try again. Absolutely no head and no carbonation. It was stored properly from the day I bought it, so I hope this was just a bad example. The pour was near pure black. The aroma was more sweet and roasted chocolate malt than anything. The taste added some coffee and bourbon. A little carbonation would have been welcome. Even without, obviously a good beer.

Bottle @ Aarhus tasting. Black with a brown head. Aroma is sweet, roasted malt, chocolate and bourbon. Flavor is quite sweet and rather bitter. Sweet and rather bitter with warming alcohol. Oily. 121114
