COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Aromas of chocolate, cherries, smoky tar, and coffee. Black with a quickly diminishing, tan head. Some sweetness with perceptible strength, and well balanced bitterness. Full bodied, creamy, and sticky, carbonation is low, and finishes showcasing a strong and well balanced character.

750 ml bottle into snifter, best before 10/2015. Pours pitch black color with a 1-2 finger dense tan head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings around the glass. Aromas of dark chocolate, cocoa, coffee, roasted malt, caramel, toast, vanilla, bourbon, toffee, oak, light coconut, light char, and roast/oak earthiness. Very nice aromas with good balance and complexity of dark/roasted malt and bourbon barrel notes; with good strength. Taste of dark chocolate, cocoa, coffee, roasted malt, caramel, toast, vanilla, toffee, bourbon, oak, light coconut, light char, and roast/oak earthiness. Slight roast/oak bitterness on the finish; with lingering notes of dark chocolate, cocoa, coffee, roasted malt, caramel, toast, vanilla, toffee, bourbon, oak, light coconut, light char, and roast/oak earthiness on the finish for a while. Damn nice complexity, balance, and robustness of dark/roasted malt and bourbon barrel flavors; with an great malt/barrel balance and zero cloying flavors after the finish. Light-medium carbonation and medium-full body; with a very smooth, creamy, and lightly slick/chalky mouthfeel that is great. Alcohol is well hidden with only a slight warming present after the finish. Overall this is an excellent barrel aged imperial stout. All around great complexity, robustness, and balance of dark/roasted malt and bourbon barrel flavors; and very smooth to sip on for the big ABV. A very enjoyable offering.

375mL bottle pours a dark brown/black with a small reddish tan head. Aroma is slightly doughy, with mild chocolate, light dark fruit, caramel, pleasant bourbon, and oak. Taste similar to aroma with some alcohol sting, otherwise nice. Decent but it doesnít really stand out against other Bourbon barrel imply stouts.

In short: A typical sweet bourbonny Imperial Stout. Unremarkable but without flaws.
How: Bottle 750ml, corked & caged, consumed when a few months of age.
The look: Near black body topped by a small tan head.
In long: Nose has medium to high bourbon barrels presence with the usual suspects of vanilla, chocolate and friends. The beer is obviously full bodied with an appropriate medium carbonation, pleasant mouthfeel. Taste is pretty much what you can expect from a beer like this. Chocolaty cake dipped in vanilla, medium roast, some black liquorice, light dates and raisins fruitiness. Quite sweet but not too much so. I couldnít find anything wrong with this beer yet it didnít win me over, felt generic, without personality. Enjoyable but far from memorable. There is no serious study that clearly demonstrates whether having thousands of ratings makes you more attractive the opposite sex or not, I donít know, I think Iíll go with my beer gut feeling on this one.

Pours a coffee brown with a thick tan head. Roast malt and coffee aroma has an overtone of bourbon-soaked wood. Iím going Pavlov! Flavor starts with dark alt and adds on roast coffee, bourbon, oak, horehound, molasses and caramel tones for a WOW! beer. Smooth and fizzy texture leaves a mouthgasm-inducing finish of bourbon-infused oak, roast malt and molasses. Come to the Dark Hollow side - we have great beer!

On tap at Whole Foods. Pours a dark brown/near black with light passing, casting red hues when backlit. Beige head settles to a thin to moderate head with sugary lacing. Aroma is bourbon, roasted malt, and bakerís chocolate. Flavor is bourbon upfront; surprisingly prominent. Coffee and chocolate notes follow, with a smoky complexity throughout. Silky thick mouthfeel, full bodied. Semi sweet chocolate finish. Worth seeking out.

Corked 75 cl bottle @ home. Pours black with a tan head that leaves some lacing. Aroma and flavour are roasted malt, chocolate, vanilla, liquorice, and bourbon - with a slightly bitter finish.
