Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Poured from a large corked bottle into a trumpet glass to drink. The beer had a viscous black color with the slightest dark brown hue to go with a large, creamy dark tan head with average retention, but excellent cling and phenomenal lacing. Its aroma featured toasty notes of chocolate, coffee, and a hint of chili, along with some modest caramel and a bit of grainy and earthy hops. Its taste was surprisingly bitter and grainy with an earthy character, and only had modest chocolate and caramel sweetness deep underneath. The mouthfeel was intense, wet, and filling, with ample carbonation and a thick, creamy feeling, and a noticeable presence of alcohol. The punch of the taste and palate was perhaps over-the-top.

Need to try again. Absolutely no head and no carbonation. It was stored properly from the day I bought it, so I hope this was just a bad example. The pour was near pure black. The aroma was more sweet and roasted chocolate malt than anything. The taste added some coffee and bourbon. A little carbonation would have been welcome. Even without, obviously a good beer.

Bottle @ Aarhus tasting. Black with a brown head. Aroma is sweet, roasted malt, chocolate and bourbon. Flavor is quite sweet and rather bitter. Sweet and rather bitter with warming alcohol. Oily. 121114

750 ml caged and corked bottle, cork says best by JUN 2015. Served in a snifter, the beer pours dark brown/black with a quarter inch tan head that stuck around a little while. Thereís also a small amount of lacing. The brew smells like roasted malt, bittersweet chocolate, vanilla, oak, caramel, bourbon, and some dark fruit. Taste is similar to the aroma, but thereís also some burnt/charred malt and dark bread noticeable. Mouthfeel/body is medium, itís smooth and a bit slick, but has very low carbonation. Overall I liked this, but maybe Iíd like it better if it had some more carbonation. Iíll have to pick this up again in the future and see if it was just this bottle or batch that was this way. $9.99 a bottle.

750ml bomber cellared a month and served at cellar temperature, from Drake - thanks Dan! Pours black with a light brown head leaving coats of lace. Aroma has oaky-bourbon, then some nice chocolates, and espresso and charred malts show through. Taste is of heavy espresso, bakers chocolate, some char and some molasses, with lots of nice bourbony vanilla. Medium to full bodied, with alcohol. Finishes solidly bitter-sweet. A very tasty complex brew -- nice for #1350. 16.2

Pours dark brown almost black with a small white wisp. Aroma is vanilla, roasted malt and sweetness from the bourbon. Taste is a sultry sweet whiskey sweetness with small roasted malts, vanilla and dark fruit.

Really liked this, thanks Chad! Pours black with lots of lacing and some tan head. Nose is vanilla and espresso. Flavours are vanilla, molasses, espresso, and plenty of dark fruit. Taste heavy sweet, med/heavy bitter. Full creamy body with lively carbonation.

375ml bottle pours dark briwn black with 2 finger tan head. Nose is wet coffee grounds, licorice, bourbon spice, vanilla. Taste is a bit high carbonated, nice boozy burnt chocolate cake and licorice, coffee and vanilla cream. Finish is charred dark bitter bakerís chocolate and some nice cake-y notes, boozy bourbon. Pretty well done.

Bottle: Thanks jdb288: Served in a Chouffe glass: Brown lacing. Black beer. Aromas of roast, light coffee, light bourbon, some coffee, dark chocolate, light vanilla, light spice, some mocha, toffee and a hint of bay leaf. Flavours of roast, coffee, bitters, some bay leaf, light spice, older wood, light bourbon/liquor, hint of dark chocolate, light sweet tar tone, mocha, toffee, some caramel, some oat and light vanilla. Aftertaste is bitter, roast, coffee, wood, light bourbon and herbal roast. Low carbo, watery close to silky mouthfeel, fuller bodied and a light sticky texture. Somewhat of an easy drinker, yet close to become complexer. Barrel sgung added something for sure but it could be more.
