COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Poured from a large corked bottle into a trumpet glass to drink. The beer had a viscous black color with the slightest dark brown hue to go with a large, creamy dark tan head with average retention, but excellent cling and phenomenal lacing. Its aroma featured toasty notes of chocolate, coffee, and a hint of chili, along with some modest caramel and a bit of grainy and earthy hops. Its taste was surprisingly bitter and grainy with an earthy character, and only had modest chocolate and caramel sweetness deep underneath. The mouthfeel was intense, wet, and filling, with ample carbonation and a thick, creamy feeling, and a noticeable presence of alcohol. The punch of the taste and palate was perhaps over-the-top.

UPDATED: DEC 20, 2014 On the Sixth Day of Christmas 2014 the beer gods gave to me . . . a beer that has been well hidden. What a solid barrel aged stout. Pours a thick luscious black with a tan foam head. Aroma of chocolate, roast and earthiness. Perhaps some vanilla and dark fruit underneath. Nice thick frothy, chocolate shake like start with a perfect hop hit and whiskey spice on the backend. Very enjoyable.

Pours an opaque black from the bottle with thin wisp of tan head that leaves light lace. Aroma is roast with hints of chocolate and vanilla behind. Taste is more roast and soy backing up the great barrel notes. Bittersweet finish with nice thick mouth, lasting barrel notes, pretty darn good.

Bottle to glass. Pours a deep brown to black color with a creamy medium brown head. Aroma is light roasted malts, hint of vanilla. Flavor has a slight burnt roasted malts, extremely faint bourbon/vanilla character. Medium to heavy body with a lingering burnt roasted malts a light bourbon background. Decent imperial stout, but wish the bourbon barrel was a bit more up front.

Black pour with tan head. The aroma carries cocoa, vanilla, roast malts and a sweet fruitiness similar to chocolate covered cherries. The flavor is well balanced between the sweetness and the roast. No hops here. The bourbon also isnít pronounced enough to be picked out.

Need to try again. Absolutely no head and no carbonation. It was stored properly from the day I bought it, so I hope this was just a bad example. The pour was near pure black. The aroma was more sweet and roasted chocolate malt than anything. The taste added some coffee and bourbon. A little carbonation would have been welcome. Even without, obviously a good beer.

Bottle @ Aarhus tasting. Black with a brown head. Aroma is sweet, roasted malt, chocolate and bourbon. Flavor is quite sweet and rather bitter. Sweet and rather bitter with warming alcohol. Oily. 121114

750 ml caged and corked bottle, cork says best by JUN 2015. Served in a snifter, the beer pours dark brown/black with a quarter inch tan head that stuck around a little while. Thereís also a small amount of lacing. The brew smells like roasted malt, bittersweet chocolate, vanilla, oak, caramel, bourbon, and some dark fruit. Taste is similar to the aroma, but thereís also some burnt/charred malt and dark bread noticeable. Mouthfeel/body is medium, itís smooth and a bit slick, but has very low carbonation. Overall I liked this, but maybe Iíd like it better if it had some more carbonation. Iíll have to pick this up again in the future and see if it was just this bottle or batch that was this way. $9.99 a bottle.

750ml bomber cellared a month and served at cellar temperature, from Drake - thanks Dan! Pours black with a light brown head leaving coats of lace. Aroma has oaky-bourbon, then some nice chocolates, and espresso and charred malts show through. Taste is of heavy espresso, bakers chocolate, some char and some molasses, with lots of nice bourbony vanilla. Medium to full bodied, with alcohol. Finishes solidly bitter-sweet. A very tasty complex brew -- nice for #1350. 16.2
