TheBeerLover (1007), DC Metro Area, USA Dec 14, 2006 Enjoyed a pint of this one on draught at the brewpub in Bristol, VT. Bobcat Cafe is a wonderful, tiny, little brewpub, producing some amazingly good beers. Their Holiday IPA is a fantatic example of AIPA brewed with bails of hops. This beer pours to a deep golden color, with a thick, white head, and a good carbonation. The nose on this beer is fantastic. HUGE waves of zesty, pungent piney and citus hop aromas flood the nose. The palate is firm, with lots of good biscuit malt flavor, along with really vibrant, tangy, lemon/citrus hop flavors. This beer finishes with more great pale malt flavor, and tangy hop flavor, then ends with a very long, very dry, very bitter pine and citrus hop bite that lingers. Wow. This is one impressive AIPA. A total hop blast, with phenomenal hop aromas, flavors, and bitterness. One of the best AIPA’s I have ever tasted.
