COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for 18 months or more. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Tasted on draft at Quenchers. Pours very dark amber with a thin white head. Nose of brett, vinegar, red apple, citrus, and some cereal. Flavors of red wine vinegar, sour raspberry, red apple, and quince. Carbonation is very lively with a lighter body and a medium finish. This is a great example of what a sour beer should be. It isn’t the best, but a prototypical example.

Bottle opened on the bus ride from Dunedin Brewing Co. to Cigar City Brewing. Pours clear amber color with off white head. Sour cherry aroma. Flavor is tart cherry, caramel and some wood. medium body with oderate carbonation. Thanks to whoever opened this.

On tap at Stone Brewery Bistro. Brown red color. Buttery sweet Duchess type flavor. Medium sourness hidden in a sea of light sweetness. Smallish head. Delicious.

Draught at Falling Rock Tap House. Pours clear, ruby-brown with a medium, frothy, off-white to light tan head, good retention and lacing. Aroma is sour fruit, sweet malt, spice, light hops, and cherries. Flavor is medium sour lactic, sweet malt, caramel, and cherry. Medium body and carbonation.

Reddish Mahogany pour with a tiny offwhite head. Aroma is tart cherry, wet cherry wood, acetic acid, some light brown sugar. Mouth is creamy but not overbearing, relatively drinkable. Flavor is tart cherry pit, woody, sour fruit and a bit of sweet malt. Really quite good.

On tap at Blind Lady Ale House (San Diego, CA): Pours an intensely hazed, reddish/copper/brown and topped with a nice two-finger beige head that dissipates fairly quickly. Aroma of tart cherries, balsamic vinegar, light chocolate, and under-ripened fruits such as apple, grape, and banana. Flavors are similar. Extremely tart in the beginning of the mouthfeel, but quickly rounds out towards a more balanced and smooth finish. Drinkability: Really quite good overall, but lacks complexity to other sours (Russian River... and there’s just no comparison). Pairing: Godiva cherry cordials. Rebuy: Yes. #338 on 13032010. DG.

draft at uber. pours a cloudy dark brown with a dense, creamy tan head. plenty of sheety and stringy lace. big forward cherry balsamic nose, smells like a classic marinade. creamy medium body, soft carb. balsamic, cherry, and dark fruits on the mid palate. sweet and easy drinking. mild tart finish.

A burgundy red ale with a thin pinkish white head. In aroma, pleasant cherries,, light horseblanket funk, epsom salts. In mouth, a well balanced sweet and sour ale, sour cherry candy, light lactic notes, very well done. On tap at American Flat Bread, Jan. 11 2010.
