COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Aroma: The nose is vinegar, sour yeast, and fruit, with some woody and malt notes
Appearance: It pours a mahogany color with an off-white colored head on it
Flavor: The flavor is heavy vinegar, plenty sour, with some tart fruit and yeast/spice notes
Palate: The body is medium, but it doesn’t have a great drinkability or mouthfeel for me
Overall Impression: I’m surprised I never rated this one, so here it is now. This isn’t my favorite type of beer within this style just due to the overwhelming vinegaryness of the flavor, and personally not quite loving that type of sour. Still, I can appreciate this one, even if it isn’t totally for me.

Amber coloured and clear. Has an off-white head, lasting. Heavy acidic aroma, yeasty, breatt and fruits. Flavor starts acidic with light sugar sweetness, cherries? Lightly syrupy texture.

Bottle 3 at Tool Tasting Night from Cotteridge Wines; dark copper pour with a frothy off white head, light vinegar and fruit aroma, taste is glorious juicy fruit really complex, right amount of lip puckering sour backed up with cherry and apple, some woody action and a dry mouthfeel.
