COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Small, fizzy, white, fully diminishing head, virtually no lacing. Normal, medium amber body. Moderate malty aroma, with notes of nutty and molasses. Light hoppy aroma. Moderate yeasty aroma, with notes of barnyard and earth. Notes of cherry, red wine and cask wood. Moderate sweet, light bitter, heavy acidic and acetic (vinegar) initial flavor. Average, light sweet, light bitter, heavy acidic and acetic (vinegar) finish. Light to medium body. Watery texture. Lively carbonation. Light alcoholic, moderate astringent finish.

1/2 pint on tap @ One Pint Pub. Pours deep amber with a high off-white head. Aroma is sour malts and some fermented fruits. Flavor is very sour malts, berries, vinegar and some acidic, tarty notes. Great.

(bottle - 330 ml) Dark copper pour with a puffy white head. Heavy tartness in the aroma with some dark fruits and a light sweetness. Big sour cherry flavor at the start with a nice tartness throughout the flavor leading to a sweet and sour finish. [9/11/15]

33 cl bottle @ home. Clear red-brown beer with a small, beige head, bit adhesive. Aroma is tart, sour cherries, wood. Medium to high carbonation. Taste is tart upfront, sour cherries, lemons, but sourness quickly fades to dry and some sweetness. Aftertaste is bit lemony and dry. Very promising start, but too bad that the sourness faded away so quickly.

At the legendary Tornado in San Diego. Mahogany rose with thin head. Tart, acidic, sour cherries... Flavors cascade and layer over the tongue, makes you pucker and smack your lips... Delicious!

From bottle - Thanks Martin! Aroma of red berries, dust, a bit of nail polish remover. Taste is lots of red berries, really sour, a hint of acetone, red currants. This is a way better than expected!

UPDATED: FEB 23, 2016 Bottke at home. Pours reddish brown with a white head. Aroma of cherry, sour Berrys, dusty, hint of acetone, musty. Taste is sour cherry, dried fruit, quite vinous, quite sour, woody. Quite complex and sour.

From bottle on board Fridtjofen 24.10.15. Dark ruby. Beige head and lacing. Sour aroma, with hints of berries of the forest, vanilla and brett. Similar taste, with spur cherries. Medium high carbonation. Dry and astringent. Well-balanced, complex and not extreme in any way. Refreshing.
