The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Bottle from JefVerstraete, thanks! Red fruit in abundance - raspberries, redcurrant, cherries (together with the stones), balsamic vinegar, blueberry jam and dark malts. The aroma is nothing short of amazing. Very rich stuff but also very sour and astringent, more so than many lambics that I’ve drunk. Definitely high quality stuff though.

---Rated via Beer Buddy for iPhone

From a bottle at Chez Sophie in Shrewsbury. Deep chestnut in colour, clear with a flat head. Acrid! Follows onto the palate, massively sour; vinegar and indescribable taste. Delicious.... A paradoxical beer.
