COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Bottle. Pours a clear reddish dark brown color with a small off white head on it. Nose is definitely sour with a little malt and oak peaking through to complement the sourness. Taste is very sour, but has a few hints of sweetness throughout. Very pleasant drink.

Bière absolument surcotée sur le site !! D’ailleurs la cote belge la plus haute est à 4,4 ce qui veut dire 88 au grand maximum, et non pas 99 !!! Ceci change tout ... Certes la fermentation spontanée et le mûrissement pendant 18 mois en fût de chêne constituent des procédés de fabrication très respectables, et même dirons-nous originaux et contraignants, mais ceci ne donne pas un laisser-passer au niveau de la dégustation !!! Le brasseur définit sa bière comme une bière acide complexe. Couleur roux vineux assez joli. Clarté nette. Bulles fines nombreuses partout, pas mal vives. Mousse beige qui tombe et nappe. Arômes de fût de vin, vinaigre de vin, lierre, vigne vierge, pointe de piment d’Espelette. 1ère bouche assez liquide sur une aigreur de vin (entendez un vinaigre), avec une pointe de muscade. Arrière-bouche assez vineuse, fût ancien, pomme, cerise du Nord. 2ème où la cerise du Nord et la pomme verte passent en avant. Arrière-bouche de fût de chêne. 3ème avec un fondu un peu plus important, mais nettement sur l’acide. Arrière-bouche sur du fruit rouge, airelle, groseille rouge jeune. La longueur n’apporte rien d’autre, aigreur, acidité, avec un peu de muscade et de moutarde (?!) La levure est absente (fermentation spontanée). L’alcool est banal : 5,5 % abv. Il ne peut aider en rien. La finale pourrait faire pleurer (comme les oignons quand on les pèle...) et pour cause... CONCLUSION : si vous aimez un verre d’acide ayant la couleur du vin rouge (jeune) d’un banal vigneron de quartier, alors plongez sur la Jacobins rouge, mais de grâce arrêtez de lui donner des cotes de Château Margaux. Bottled:
Eye: Clear, deep orangey red with a mid-sized head.
Nose: Sour cherries, rhubarb, lingon berries.
Mouth: Sour and lively.
Tongue: Sour cherries, sour grapefruit, oak barrels.
Brain:Sour and delicious. I’ve had lambics that were less sour than this one!

Bottle from a friend. Dark ruby color, white head. Sour taste with cherry, tart, tannins, oak, acidic notes and vanilla. Sour finish with cherry, vanilla and oak. Excellent flemish sour ale.

Bottle. Pours a red-brown color with a finger high off white coloured head. Sweet and vinous aroma with notes of balsamico and strawberries. Taste starts out sour and ends sweet with heavy notes of green apple and strawberries. Medium dryness. Also small notes of balsamico and wood. A nice, light sour that may not be the most complex beer; but is on the other hand very drinkable.

3 finger beige head, red-amber. Nose: Barnyard, raspberry, vinegar, cherry and balsamic. Aroma: Vinegar, raspberry, strawberry, woody notes, balsamic and cherry. Long, sour ending.
