The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Aroma: smells a little like a vinegary red wine without the funky smell normally associated with sours.Appearance: light head as expected but a really nice, deep red-brown color.Taste: wow. A really tart flavor throught the entire taste. This is what a sour beer should taste like.Palate: thin but this class is.Overall: A great looking beer that defines what sour should taste like. It is the right beer to drink leisurely while sitting outside in the evening. Even at the low ABV I would not consider this a session beer because it is not one you could drink multiple times in an evening and enjoy.

Deep red color with a slight faint head. Aroma of sour cherries. Slight vinegar too. Mouth is pretty nice. Taste is sour stone fruit, lots of cherry with a hint of vanilla. Not bad, but I couldn’t drink this all the time.

UPDATED: JUN 5, 2012 Bottle at Eulogy. Poured a very dark red brown with a tiny head. Quite delicious moldy black cherry with flavors running the entire cherry tree root to stem. Some slight cocoa flavors from the malt but full fleshy cherry dominates. Exhibits a lot of age and care. A few heavier malty flavors offset some of the sour bite though the blend between the elements is wonderfully smooth. Potent, yet noticeably better married to its mixed flavors than your average lambic. A delightful find! Update: Had the draft version a few months later. Still great, but was noticeably sweeter and fruitier.

Bottle. Head is initially average sized, frothy, light brown, mostly lasting. Body is dark amber/red. Aroma is lightly malty (caramel), lightly yeasty (horseblanket), with notes of cherry, old wood, Mandarin orange, honey. Flavor is moderately sweet, moderately to heavily acidic. Finish is lightly to moderately sweet, moderately to heavily acidic, lightly bitter. Medium body, velvety texture, lively carbonation, lightly alcoholic. Very nice...a bit sweeter than sourheads will probably want, but there’s quite a bit of sourness to counteract that so it ends up just seeming "bigger" than it is. It doesn’t really have the depth or pizzazz of 4+ examples, but it’s quite pleasant and doesn’t do anything wrong.

From the Bottle. Not much aroma but that’s made up for in the taste. Initial sweetness followed by a tart cherry sourness that lingers on the palate for quite some time, also some earthy notes present from the wood. Soft mouth feel and light carbonation.. Very good beer. I need to pick up some more bottles!

Pours dark reddish brown with an off white head that slowly fades. Aroma is cherries, wood, and vinegar. Taste is sour cherry and some bread. Some drinks had more sweetness at first then it finishes sour. This is very good.

UPDATED: SEP 15, 2012 Poured a deep brown, slight red hue, and a small tan head that quickly dissipated. Aroma of tart cherry, light vanilla, light Brett, but I’m not picking up the cocoa. Taste is tart cherry from the start and finishes very sour. Mouthfeel is moderately thin, which is surprising. If you like mouth-puckering sour, this beer is for you. Delicious.

Bottle. Reddish brown color. Caramel, oak and red fruit in the aroma. Sour flavor, overshadowing the also present sugary sweetness. Toffee, soft red fruit. Mouthpuckering lemon. Fairly short aftertaste.

A clear dark red/brown colored beer, with a beige head. The aroma has sour with wood notes. The taste is sour, wood notes and a little bitter. The aftertaste has a little sweet moving to sour with some notes of wood.

Appearance is a ruby hue with a white carb. Smell is of acidic fruit and wood. Taste is great. Super sour and dry, with the fruit melding well in the funk. Thick coating on the tongue that makes the flavor more pronounced, somehow. Really fruity and sour. Great beer.
