COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Such an enjoyable sour ale. Amazing sweet/sour balance of flavor. Rich orange candied sour notes that seem to continue forever. Dark cherry notes with some vanilla on the finish. Really good. Highly recommended.

Bottled. Pours clear, dark red-brown with a short head and minimal lace. Aroma is cherry and light oak. Has an unpleasant earthy vomit-like funk. Lets call that cheese. Very tart cherry skin attack with sticky-oily palate and a sour finish that goes and goes.

Rated Easter at apt Buffalo ny (Marys first easter). Pours a deep red with a foamy head. Aromas of sour cherry, candy apple, cask imperssions, light fruitiness and some tartness. Flavors highly sour with smooth barrel cognac impressions, and green candied apple. Flavors follow with a big tartness. What a journey this beer has been through during those 18+ months. Don’t find to much sweetness but a crisp tartness that fades quickly in the finish. The dark cherries show through differently in the nose than the palate but are the dominant flavor and aroma besides the tart sour. Well done attractive looking brew.

33 cl bottle from Systembolaget. Pours a clear amber fluid with some head that quickly fades away. Lots of red berries, some vanilla and balsamico on the nose. Taste is nicely balanced, not overly acidic like some other sour reds. I get cherries, almonds, vanilla and some earthy leathery notes. Very enjoyable.

April 16, 2014 - on tap at Hollander. Clear reddish brown pour with some head. Aroma was fruity, sweet and a bit sour. Taste was consistent with aroma, but a bit heavier on the sour. Smooth and easy drink.

Bottle. Clear red amber beer with a medium sized beige head. Aroma is spicy with notes of acidic pears, apples, cherries and woody vanilla. Flavor is fruity with notes of cherries, vanilla, wood and leather. Really great.

Mörk bärnstens färgad med ett orange-brunt skum som snabbt faller. Doft: Funk, rengöringsmedel, trä, röda bär, äppelmust. Smak: Funk, trä, omogna krusbär och äppel kart, väl lagrad balsamvinäger, lite sockerkaka. Koncentrerad, god smak.

Bottle. Pours a clear reddish dark brown color with a small off white head on it. Nose is definitely sour with a little malt and oak peaking through to complement the sourness. Taste is very sour, but has a few hints of sweetness throughout. Very pleasant drink.

Bière absolument surcotée sur le site !! D’ailleurs la cote belge la plus haute est à 4,4 ce qui veut dire 88 au grand maximum, et non pas 99 !!! Ceci change tout ... Certes la fermentation spontanée et le mûrissement pendant 18 mois en fût de chêne constituent des procédés de fabrication très respectables, et même dirons-nous originaux et contraignants, mais ceci ne donne pas un laisser-passer au niveau de la dégustation !!! Le brasseur définit sa bière comme une bière acide complexe. Couleur roux vineux assez joli. Clarté nette. Bulles fines nombreuses partout, pas mal vives. Mousse beige qui tombe et nappe. Arômes de fût de vin, vinaigre de vin, lierre, vigne vierge, pointe de piment d’Espelette. 1ère bouche assez liquide sur une aigreur de vin (entendez un vinaigre), avec une pointe de muscade. Arrière-bouche assez vineuse, fût ancien, pomme, cerise du Nord. 2ème où la cerise du Nord et la pomme verte passent en avant. Arrière-bouche de fût de chêne. 3ème avec un fondu un peu plus important, mais nettement sur l’acide. Arrière-bouche sur du fruit rouge, airelle, groseille rouge jeune. La longueur n’apporte rien d’autre, aigreur, acidité, avec un peu de muscade et de moutarde (?!) La levure est absente (fermentation spontanée). L’alcool est banal : 5,5 % abv. Il ne peut aider en rien. La finale pourrait faire pleurer (comme les oignons quand on les pèle...) et pour cause... CONCLUSION : si vous aimez un verre d’acide ayant la couleur du vin rouge (jeune) d’un banal vigneron de quartier, alors plongez sur la Jacobins rouge, mais de grâce arrêtez de lui donner des cotes de Château Margaux. Comprenne qui pourra ...
