COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for 18 months or more. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

From tap at Monks Kettle. Pours dark redish with a small off-white head, nice lacing on the glass. Aroma is dark cherry fruity and light acetone to dry phenolic. Sour, dry and slight wooden touch. Citric andcherry fruity. Lingering citric and fruity into a dry and mild fruity finish.

Light blond color. Strong acidic and acetic aroma, with a dash of Bretts. Lean body, with low carbonation; a feeling of uva fragola; sour; citric. Refreshing.

Red mahogany color. Nice aroma, lactic, with caramel and cellar smell. Reasonable body structure; caramel flavor, light residual sweetness, interesting fruit profile (cherries, but also raspberries, and some cherry kernels); medium lactic sourness. The final is lightly astringent and woody, a bit sour, but also short. Pleasant, it reminds me the Rodenbach family. Good.

(draft) Clear deep red body with a touch of brown, topped by a small beige head. Aroma is medium sweet, wood, sour cherry. Taste is medium sweet, wood, cherry, good sourness, fair sweetness to complement the sourness. Light-medium body, light stickiness, acidity. A wonderful Flemish sour -- a bit bolder than the Duchesse.

UPDATED: MAY 20, 2012 Bottle… RBWG ‘10This beer rocks!... Mostly clear, light brown ale with a small, fat-bubbled, off-white head. Earthy, woody, funky nose with black cherry and barnyard notes. Medium-bodied with moderate carbonation. Fruity and fairly sour. Finishes tart, lightly sweet, then dry. Like Ommegang’s version, I could drink this brew all day, every day. World class Flanders Red!
