COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for 18 months or more. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Simply amazing from tap. Dark brown with a thin head. The nose is loaded with vegetal/balsamic notes. Medium bodied sour with plenty of tart berry an field greens. Long finish.

330 mL btle. Dark, deep mahogany in color w/ white head. Nose is outstanding w/ vibrant aromas of green apple, cherries, balsamic and a subtle hint of vanilla from the barrel. Everything on the nose follows through on the palate of this complex beer. The sourness is wonderfully balanced and is not sharp or acidic. Wonderful beer that shines with earthy cheeses or anything from the grill.

Draft at Pizzaria Paradiso. Wow! Pours a very dark garnet. Aroma is sour fruit, vinegar and some malt. Flavor is mostly sour apple and red wine vinegar, with a decent malt background. The sour kick grows through the finish with a tart aftertaste. Fantastic! Exactly what I want from a Flemish Red.

On tap at hot city pizza for beer week. Aroma is of sour cherry, makes my mouth water. Flavour is also dominated by sour cherries, some cocoa in the way background. This is very close to Russian river supplication, or perhaps visa versa.

Dark brown color with a red hue. No one from TN should ever say hue but I done did it. Aroma is amazing, sour cherries, apples, vinegar, nutmeg. Flavor is very sour with cherries, apples, spices. Face pukering sour. Id do a keg stand with this seriously. Amazing. Why did I only get a 4oz pour.

Last beer of the FS 10th party! .. Pours a deep maroon purple .. light but sticky head, light lacing .. smell of tart sugar, cherry skins, plums, and other dark dirty delicious things .. . its like sitting on a cloud, on top of two clouds .. . good tartness level, but still well balanced .. i don’t want your repo thugs coming after me! you can take your tooth back!!

Dark ruby, fluffy tan head. Smells of tart cherries and raspberries, sugar and sweet caramelized oak, apples, limes. Has a burst of tart and acidity, cherries and a multitude of berries with some lemon bringing out the citrus, evident sweetness and strong sourness. Strong up front sourness and acidity, with a nice sweetness all around like granulated sugar, reminds me of the feeling of eating a pear. Bit of a sipper with the sweetness and acidity.

Draft, goblet, poured lovingly. Just a bit of head that quickly recedes to a gentle lacing around the glass. Aroma is slightly woodsy, malty, a touch of sherry. Color is a rainbow of tawny amber at the edge of the glass, to garnet, to a deep core of ruby brown. Palate is very balanced, medium mouthfeel, low to medium effervescence. Flavor is a grainy malt with a very light hint of residual sweetness. Sour character is present but not dominant and follows the malt closely towards a dry finish. Quite simply one of my top favorites.
