Signalons d’abord que cette bière connaît maintenant une nouvelle étiquette superbe à fond bleu roi, avec un blason doré en haut entouré du marquage anno 1908. Répétons encore que ces bières, comme souvent, sont des triples bien sûr, mais aucunement des triples d’abbaye.... puisque cette recette ne se réfère nullement à une abbaye, mais à un restaurateur de cloches de la commune de Belsele. Celle-ci titre à 8,5 % abv, ce qui est un bon placement pour une triple. Couleur jaune doré pâle. Clarté perturbée par de la matière en suspension, due à la grande vigueur à l’ouverture. Bulles moyennes partout dans le verre. Mousse blanche épaisse et bien crémeuse qui tient à 1,5 cm : superbe. Arômes de houblon en fleur, malt clair, agrumes, fleurs blanches, jasmin. 1ère bouche soyeuse avec un bel ensemble malt/blé, ainsi que des fleurs, et une épice fine. Arrière-bouche déjà à l’équilibre, fraîche, fleurie. 2ème sur des agrumes, pamplemousse rose en un, houblon fleuri, malt clair. Arrière-bouche belle et longue. 3ème d’aussi belle facture, harmonieuse, dominée par les fruits. Arrière-bouche assez fleurie, sans toutefois verser dans la mièvrerie. La longueur enchaîne sur un complexe malté doux, à la texture magnifique. La levure est dans une ligne très digne, fine et douce, un peu relevée. L’alcool fait un travail parfait de soutien à ces arômes et saveurs très fins. La finale ne désempare pas et apporte encore de nouvelles touches fines et nobles. CONCLUSION : une très belle bière, à la fois houblonnée et fleurie, à la texture très soyeuse, quasi veloutée. Pleine réussite à savourer.

questa birra è veramente fantastica...gusto dolce e deciso, giusta corposità e un odore abbastanza intenso! si lascia bere con molto piacere, non mostrando affatto i suoi 8,5% gradi.

330 ml bottle into chalice, best before 2/12/2016. Pours lightly hazy/cloudy deep gold color with a 1-2 finger fairly dense off white head with good retention, that reduces to a nice cap that lingers. Nice soapy lacing clings on the glass, with a large amount of streaming carbonation retaining the head. Aromas of big lemon zest, peach, pear, apple, light banana, pepper, herbal, floral, light clove, candi sugar, bread, and floral/yeast earthiness. Awesome complexity and balance of fruity/spicy yeast, earthy hops, and pale malt notes; with great strength. Taste of big lemon zest, peach, pear, apple, light banana, pepper, herbal, floral, light clove, candi sugar, bread, and floral/yeast earthiness. Moderate earthy yeast spiciness on the finish; with lingering notes of lemon zest, peach, pear, apple, light banana, pepper, herbal, floral, light clove, candi sugar, and yeast earthiness on the finish for a good bit. Damn nice complexity of fruity/spicy yeast, earthy hops, and pale malt flavors; with a crisp malt/yeast flavor balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth, crisp, and lightly prickly mouthfeel that is great. Alcohol is well hidden with only a slight warming present after the finish. Overall this is an awesome tripel style. All around great complexity and balance of fruity/spicy yeast, earthy hops, and pale malt flavors; and very smooth and crisp to drink. A highly enjoyable offering.

Bottle: Gusher! Big, vast and really slow disappearing creamy off white head on top of a hazy yellow orange colored beer. Smell is really nice, there is the typical yeasty fruit tones (apricot, peach), but also some wilder yeasty tones like cellar, wet stone and something light dusty wood ish. There is some rubber and caramel. Very good smell. Crispy, fruity and wild! Taste is soft and smooth, creamy yet with a growing bitterness. This seems to be such a small find, a pearl, a delicious secret, you once in a while find somewhere. There is lovely smooth fruit tones (apricot, pear, peach, apple), hops, bitters, floral tones, herbs, hint of citrus and light grainy spice, creamy malts, wood, yeast/wild yeast, bacteria, flowery bouquet, some dust, cellar and a hint or sprinkle of something like stone or chalk. Aftertaste is smooth but more than medium bitter, flowery, yeast and cellar and some hints of dusty chalk, malty wood and floral herbs. Low carbo, soft, creamy and light spicy mouthfeel, medium to fuller body and a light creamy texture. What a surprise, what a beer, what a balance. Very good!

Bottle @ brewday. Aroma is fruity hops, nice malt note. Touch of herbs and yeast. Very promising. Flavour is deep fruity herbal hops, medium bitter, strong biscuit/bread malt note. Great balance. Very good tripel.

Flaske: Orange gul let uklar øl med et stort flot skumhoved. Klassisk trippel duft med en god del gær i. Meget frisk karbonering giver en fyldig mundfylde der står godt til en lækker men dog almindelig trippel smag. Alt ialt et yderst behageligt bekendtskab.

33cl bottle. Hazy orange with small to medium white head. Nose : peach, yeast, little tart. Sip : well carbonated, medium bodied with oily texture. Sweet with moderate esters, delicious peach and some banana. Little sour. Develops very fine hop bitterness. Notes of cooked vegetables and spices. Overall this is really delicious. Well balanced. Well done.
