Brewed in memory of a wolf that is supposed to roam in the north of Flanders, killing sheep. "Not for little lambs".

Very beautiful in appearance, with a quite good off-white head and a dark amber colour. Dried fruits (grape), caramel and coriander in the nose, well balanced between sweetness and acidity. Medium body. Complex enough to be interesting.

2/8/2009 7:35:09 AM Bier Koning. Hazy orange with way too much head. Lost half my beer in the bubbles. Fruity and spicy nose. Taste of apples, yeast, spices. A bit of cardboard in the end. Typical but not really my thing.

Troebel lichtbruin bier met veel schuim. Smaak is zoetzuur en fruitig met iets van gember en kaneel. Apart maar erg goed. Smaak blijft lang hangen.

Bottle courtesy of Deanso. Poured a murky dark brown with a frothy light tan head. The aroma is red berry citrus yeast. The flavour is moderate bitter with a light citrus, big woody hop bitter palate and a lingering bitter finish. Medium bodied with average carbonation.

(33 cl bottle from Carrefour Express in Galeries Ravenstein; BBD: September 9th 2016; W1408142) Pours a semi-clear amber with two-finger off-white head that fades. A gusher it seems. Some lace. Aroma has some off-notes with tart and metallic ingredients. This gives me associations to an infected beer and the style label of *Belgian Ale" is really not much to go by. However, the brewer likes to say this is not for lambs and I can see that several notable reviewers have remarked that tartness is an ingredient of this beer even though other people say that it’s "sometimes infected". I guess I’m as bewildered about this beer as the brewer intended me to be: "Uiteindelijk werd nooit opgehelderd wat er precies aan de hand was." 20 percent of the grain bill is wheat, which I guess would also contribute to the violent head formation and acidic character. Perhaps I drank this under a full moon? Oily texture, medium body, medium carbonation and a tart finish. Flavour is tart with grainy notes. Would not drink again.

Found back quite some tasting notes, among them, this one. APPEARANCE: dark blond beer, small stable white head. NOSE: caramel, fruity, wheat. TASTE: faint alcoholic, malty, wheat, bit fruity, balanced, but nothing special.

(Boelens Waase Wolf) Bottle 330 ml at home, served into a tulip, ABV 6.5% Dark orange colour on the body, mostly clear. Tall and a bit frothy, off-white head, with average retention, leaving spots of lacing on the glass. Nice aroma, herbal, with juniper berries, leaves, some barnyard on the background. Taste is also herbal, some acidity and sourness but quite pleasant. Juniper berries again, white pepper, grapes. Medium body, biting carbonation. Nice.

Bottle. Pours hazy amber with airy but stable off-white head. Clear aroma of flowers, caramel malt, hops and yeast. Sweetish flavour of caramel malt, with fruity and estery notes and sourish, vinous touches. Medium bitterness. Rough, estery and sweet-sourish aftertaste. Not bad but a trifle too acidic. 5 months past the BBD but this should affect a beer of this style.
