Aroma is average malt (cookie, caramel, hay, straw, meal), light hops (floral), and average esters (fruity) with notes of brettanomyces, acetic acid, and grapes. Medium body, low warmth and creaminess, and high carbonation with a dry finish.

Bretty funky nose, some canned preaches and honey, a touch of pepper. Rate is lightly sweet, lightly bitter, lots of peach and pear, some apple, some cotton candy and a bit of floral hops. Rather nice.

Pint on tap at the Second Anniversary Party at the brewery on 10/16/2010. It was a great party and a big crowd for the local scene. Too bad this beer didn’t make the grade. This was the first of several beers I had but I found it less than exciting. If this brew was produced on the new, bigger equipment, maybe they are still working on getting everything right. Golden beer with a medium white head. Mild cereal malt and Belgian yeast aroma. Cereal grain flavor, very mild everything including abv. A little belgian yeast flavor but quite tame. It was drinkable, refreshing for a warm day, but not what I expect in a Belgian Abbey Ale.

UPDATED: FEB 23, 2011 651mL picked up in Jacksonville in Five Points. Assuming this bomber would be infected like all their other bottled beers, I was not surprised to get some really funky stuff out of the aroma. Even though it was bottled fairly recently, the infection has already taken hold and is actually quite nice. There are sour cherries, sweet maraschino cherries, and even some Flemish red red wine vinegar notes coming from what looks like a fairly average amber ale. The head is gargantuan, slightly yellow, very nice retention and spotty lacing. Taste is relatively sweet, no sourness, slight cherries, oatmeal malt. Nothing offensive. Will be interested to see how these bottle develop over the next 6 months. Hopefully whatever yeast is in suspension will do some magic and give this thing a full sourness or Brettiness. 651mL intentionally stored warm for 6-7 months to really bring out the Brett infection. The pour is a semi-gusher, expected, and just explodes Brett in the nose. Taste is dry, sharp, full-on Brett. What a nice little accident. ;) 2/12/2011 7/4/7/4/16=3.6
