UPDATED: JAN 29, 2012 3 months old, sampled fresh from the Foeder, July 2010 at Brouwerij F. Boon
This beer is quite hazy with a yellow color to it and is quite flat such that there is not even a hint of a head. It smells quite yeasty, like freshly fermenting wort. There is a certain cider like smell here, but it is more like a fresh cut apple, though this note is actually fairly subtle. This definitely reminds me of a yeast starter and even gets a bit dough-like when you dig around in the nose.

The beer is sweet tasting, but has a quite bitter finish to it. A cider flavor is noticeable in the middle and this is complimented by a light tart character. A raw dough yeast flavor mimics the notes in the nose. This young Lambic is quite refreshing, though the yeast bite perhaps hinders this just a bit. This is really not yet sour, it has a light lactic quality to it, but is not characteristically so yet. The acidity seems to remind me of a fruit derived tartness somehow.

This is awesome, my first young Lambic of this trip. I really want to be able to explore more of these Lambics in training. It is a fantastic experience to taste this beer so early in its journey. I find it interesting how bitter this beer tastes, it was definitely the most surprising aspect of this beer.

A Mes rate: Straight from the barrel at Boon during the Toer de Geuze. Milky, cloudy apple juice appearance, looks like a tasty fruit juice. Mellow almost none existent nose but it is pleasant enough. Dusty and fruity flavour with plenty of apple and grape. Very very slight sourness creeps over the palate fro the dry finish. A pleasant drinkable young lambic.
