COMMERCIAL DESCRIPTION
Editor’s note: 30 kegs of 30 liters produced for Mikkeller Bar in Copenhagen. Only available at this location (has also been available at Brasserie 4:20 in Rome).

Frank Boon writes: This is quite exeptional, 2 years old Lambic from a 112 HL shaved Calvados cask, foeder # 65, second fill. The Lambic has 7,21% Vol alcohol and has a nice oak/calvados character with a nice hint of gentian. It has a great drinkability. We will blend it in our regular Geuze by the end of the month (September 2010).

Draught@Mikkeller Bar, Copenhagen (Aug 8th, 2011). I’ve written this down as Boon Calvados Lambic. Slightly hazy golden colour with a minor slightly off-white head. Aroma is sweetish sour wooden notes with some mild spices and mild honey as well. Flavour is sweetish sour wood along with mild vanilla and some quite sugary sweet notes. A bit messy, but interesting attempt.

Pours light and cloudy orange colour with almost no head. Fresh aroma of citrics fruits like pomelo. Medium sweetness, and very, very citric taste. Hints of grapefruit. Medium body, oily feel, soft carbonation and some late sour citric on the after taste. Very weird but worth the try.

From tap at the bar, you can discerned the calvados taste. Quite dry taste with some fruit flavour and distinct aftertaste.

On tap at Mikkeller Bar in June 2011. Hazy dark orange with no head. Nice funky aroma with notes of calvados. The taste was very refreshing and dry with funk, wood and grapefruit. I liked this one a lot.

Smells fresh and fruity with a hint of pears and apples along with the sourness and earthyness you normally find in a lambic. Somewhere in the nose fragments of the calvados cask can be noticed. The taste is fresh and well balanced, not to sour. The body is surprisingly light. This is a beer I could drink all night.

Cask at Brasserie 4:20. Orange body, white head. Aroma of sour apples, some wood and tart. Flavour has fruits, mostly apple. Some acid. Light bodied. Sourness is very dry. Woody afterfeeling.
