It’s a great beer. complex aroma (apple, ginger, cinnamon, rhubarb with light grassy notes), strong acidity, very long dry fruity and acid finish.

375ml bouille - BBD 04 25 2027 - cork ejects with loud POP, Boon Gueuze pours a great foamy white head over clear orange - gold coat that’s very attractive. Lacing and carbonation are silky. Aromas at room temp begin predominantly sulfuric, indicating bottle may be a bit young. This seems to blow off with glass rest. Also musty stone cellar, biting citrus, fresh turned earth and mineral. Really gets in the sinuses and opens the senses. Taste is straight-up dry and tart (for my tolerance) with apple peel, dry lemon, earth stone and some of that sulfur and petrol. Later getting some more fruit of tangerine, tart guava, under-ripe muscat grape. Some very late notes of earthy sweet spice, kola. I will re-try this bottle later cooled down a bit. Feel is slightly off-medium to light, with long sustained notes of dryness on the top of the tongue and the palate. It’s a true experience of discovering layers, overcoming challenges and appreciating subtleties.

Yellow color with white head. Aroma is citrus peel, acidic, cellar, true to itself gueuze flavors. Nice density, with good carbonation, and a bitter, dry aftertaste.

Sparkling orange color, large white head; aroma of citrus fruits like grapefruit, slightly sour, but also somewhat sweet, faint woody notes; flavor is quite sweet, grapefruity and a bit sweaty; not hugely sour, but especially the aftertaste is very tart and salty; medium body, crisp, but still quite smooth mouthfeel.

Bottle at Koekoek, Asse, Belgium. Pours a deep, cloudy yellow with an aroma of springy barnyard, lemon zest, and sweet hay. Mouthf-puckering sour lemon hay, medium barnyard, and a touch of horse blanket dance on the tongue. Tickles the tongue. Fantastic gueuze.

Brassin 2006/2007 en bouteille au St-Bock. Cette gueuze est très agréable en bouche avec une acidité moins prononcé que d’autre. Une certaine sucrosité est perceptive. Elle a une belle couleur paille. Cette bière est encore très jeune et mériterait qu’elle vieillisse encore en bouteille quelques années.

Bottle.
Slightly hazy orange with a small white head. Tart, green apples, dry, some pepper, citrus. Quite pleasant, not superb but very drinkable.

Golden with a white head. Really sour aroma with notes of dust. Champagne-ish palate. Really sour and surprisingly bitter.
