Bottle: Poured a dark brown color ale with a large foamy head with good retention and some good lacing. Aroma consists of sweet malt base with light notes of spruces and spices. Taste is also a unique mix of some solid semi-sweet malt with a Belgian touch and also some spruce notes which becomes more and more pronounced as the beer warms up to room temperature. Body is full with good carbonation and no apparent alcohol. A pretty unique take on the spruce beer style which while being interesting doesn’t necessarily wants me to drink this one regular basis.

Pours reddish-brown. Extremely murky. Aroma is somewhere between muddy and fruity, no much spices going on at this point but there is a TON of yeast in that one. TAste basically confirms this : just enough cloves, nutmeg and cinnanmon to be noticeable, and not to much so it doesn’t have a purely medicinal taste. But otherwise... I don’t if it’s me who has a problem with the yeast this brewer use, or if they just use too much yeast, but the esters are overwhelming -- and I just don’t think it feels appropriate with this one. It tends to HIDE flavors -- I suspect caramel and licorice here. It’s really spices and yeast at the front, and everything else gets left behind. Drink this one at room temperature -- This is my grade for room temperature, and it was really lower at "out of the fridge" temperature.

3.3 AROMA 7/10 APPEARANCE 2/5 TASTE 6/10 PALATE 3/5 OVERALL 15/20 Rastacouere (5919) - Montréal, Quebec, CANADA - JAN 25, 2012
The bubbly off-white head quickly dissipates from the sedimented ruby tinged brown pour that looks a bit lonely, cola-like once the head is gone, but the bubbles aren’t. Interestingly complex nose in which the very diverse ingredient list does not feel like a fraud. Indeed, beneath the honeyed, molasses and maple-like malts, various spicy, earthy, barky hints can be found. What’s interesting is how most of the ingredients can be found, but only if thinking about them. Maple, honey, spruce... you can figure them out only if you concentrate, yet you can: an unmistakenly good hint at the cohesive and subtle balance nailed by the brewer. Another interesting point, perhaps due to the honey is how it feel lighter than it is, in colour as much as in alcohol and body. We’re far from a syrupy sipper, while there is plenty of dextrinous material, the spicy background, soft acidity and spritzy nature encourages drinkability nicely. As it warms up, the spruce and spicy, leafy, herbal hops become more and more noticeable, enhancing drinkability furthermore by pushing through a notion of green freshness. I’m not a huge fan of ingredients medley, am disappointed by the looks and don’t generally like beers that are without a clear purpose of being either a drinker or a sipper, but I see lots of elements that I like here. I don’t dig it enough to buy many more bottles, but I seriously appreciate its execution and will systematically seek everything the brewery puts out.

Bottle - 500ml. Cloudy dark brown body with an average beige frothy head. Its malty aroma carries vineous, cinnamon, woody, and hoppy hints. Robust malty/hoppy taste with woody and brown sugar notes. Ends with s strong, long, warming bittersweet finish. Good stuff.

A deep dark brown ale with a thin mocha head. In aroma, a sweet caramelized malt with faint licorice, fruity esters, molasses, quite nice. In mouth, a smooth licorice candy sugar malt with light maple notes, a bit light in mouth, but nice. On tap at Brouhaha, Dec. 16 2011.
